If you’ve never had Duchess potatoes, they are essentially mashed potato portions that are piped and then baked. They form a nice, crispy outer shell while the inside remains fluffy and soft. The mashed potatoes have egg yolks, which help with structure and also help provide richness.

You only need a few simple seasonings: salt, pepper, and nutmeg. However, if you wanted to add onion powder, garlic powder, or other seasonings to add extra flavor, you certainly could! Aside from the ingredients mentioned, the only other ingredient is the light butter substitute, which gives the potatoes a buttery flavor and also makes them easier to pipe.

Although this recipe does take a little bit of effort, it is still relatively quick. And the results will definitely impress your family or guests.   • 22 ounces Russet potatoes (You will need about 20 oz mashed but weigh some extra since you will trim the potatoes)
  • 2 Egg yolks
  • 2 pinches Ground nutmeg
  • 2 ½ tbsp Light butter
  • ¼ tsp Salt, plus more to taste
  • ⅛ tsp Black pepper, plus more to taste
  • Optional: 1 whole egg beaten, for egg wash

Instructions for Making Weight Watchers Duchess Potatoes

  1. Boil the potatoes to create the mash: Peel and dice the potatoes, cover them with water, add some salt, and bring it to a boil. Boil for 10-20 minutes (depending on how large your dice pieces are) until they are fork-tender.
  2. Drain the potatoes and allow to cool slightly. Preheat the oven to 400F.
  3. Mash the potatoes until they are completely smooth with no chunks (you will need 20 oz mashed), then fold in the other ingredients (minus optional egg wash). If the mixture is too thick to pipe, you can add a splash of milk.

4. Line a sheet pan with parchment paper and assemble a piping bag with a star tip. Pipe rosettes or stars with the mashed potatoes, leaving some space in between for airflow. I was able to fit 20 Duchess potatoes in one pan and 10 in another, for 30 total. Brush with optional egg wash if using.

5. Bake the Duchess potatoes for about 12-15 minutes until the exterior has a crunchy shell. If needed, broil the Duchess potatoes to give the edges a deeper golden brown color.

Variations and Substitutions

  • Topping Ideas: When serving the WW Duchess potatoes, you can sprinkle them with grated parmesan cheese, chives, or parsley. You can also sprinkle on freshly ground black pepper.
  • Duchess Potatoes without Egg: If you can’t have eggs, you can make a version with a small amount of milk (dairy or non-dairy) instead. I would add a splash at a time until it is a consistency ideal for piping. Be careful not to add too much because the potatoes would spread a lot in the oven. You should also try to pipe them a bit higher to compensate because they will likely spread a little bit either way.
  • Butter vs Substitute: If you have some extra points, you can always use real butter instead of the substitute and adjust it in the WW recipe builder.
  • Potato Type: You can also use Yukon gold potatoes, but you might need more or less of the butter substitute. Just make sure the mixture is thin enough to pipe but thick enough to hold shape.

Tips and Tricks for Making Weight Watchers Duchess Potatoes

  • Make sure to fully mash the potatoes because if there are chunks, they will get stuck in the piping bag.
  • You can use a potato ricer if you wish. I mashed mine by hand, and I was still able to achieve a smooth consistency.
  • The egg wash is optional and will give them a more golden brown color. Be careful not to apply too much because it can hide the pretty star tip details on the Duchess potatoes.
  • It is important to mix everything together while the potatoes are still warm, but they shouldn’t be super hot because it can scramble the eggs.
