  •         1 tbsp olive oil
  •          1 small red onion, chopped
  •          1 (1-inch) piece fresh ginger root, minced
  •          4 dried shitake mushrooms
  •          4 strips of dried wakame seaweed
  •          1 cup apple cider vinegar
  •          1/3 cup regular soy sauce
  •          1/4 cup maple syrup
  •          1/4 cup brown sugar, unpacked
  •          1 tsp spicy mustard
  •          1/2 tsp garlic powder
  •          1/4 tsp ground cloves
  •          1/2 tsp chili flakes

 

How to Make Vegan Worcestershire Sauce (Step by Step):

  1. Heat olive oil in a saucepan over moderately high heat. Once hot, sauté the onion for about 3 minutes, until tender and translucent.
  2. Now, sauté the minced ginger for 30 seconds more, until just fragrant.
  3. Then, add the mushrooms, seaweed, vinegar, soy sauce, maple syrup, sugar, mustard, and spices. Pour 1/4 cup of water into the saucepan, and bring it to a simmer for about 20 minutes, until the sauce has thickened.
  4. Cover and let this steep for about 1 hour. Then, strain and pour into a clean glass jar. Enjoy!
