Make a big batch on Sunday and you’re snack-ready all week.

  • Swap: Use almond butter or sunflower seed butter in place of peanut butter to suit different dietary needs.
  • Make-ahead: These are best made ahead — refrigerate for at least 1 hour before eating so they firm up properly.
  • Storage: Store in a sealed container in the fridge for up to 1 week, or freeze for up to 2 months.

I wanted no bake cookies again but decided to change them up from my regular ones. I have to be careful when I make these, they are just so yummy and hard to resist! 😉 The great thing about them is they are packed with protein and are a great snack on the go, not to mention there’s no baking involved. 🙂 These trail mix no bakes are 2 points each.

Trail mix no bake cookies

Ingredients 

  • 1 1/3 cup oats
  • 3 T coconut flakes, I used unsweetened
  • 2 T chopped pecans
  • 1 T mini chocolate chips
  • 1 T chopped almonds
  • 2 T dried blueberries
  • 1/4 cup peanut butter
  • 1/4 cup honey

Instructions 

  • Mix all of your ingredients together in a bowl and let sit in fridge for 30 minutes.
  • Using your hands roll into 20 balls, helps to have your hands a little wet. Store in a sealed container in the fridge. Each cookie is 2pp.
