This one pot chicken parmesan is not only a quick and easy meal but a delicious one the whole family can enjoy. I love that it is all cooked in one pan making clean up simple and takes just 30 minutes from start to finish!  Feel free to add in some vegetables to bulk it up, I used my zero point homemade vegetable tomato sauce to keep points low. Serves 6 at 5 smart points per serving on WW freestyle.

Ingredients
  

  • 1 lb ground chicken weighed raw
  • 2 tsp italian seasoning
  • Salt & pepper
  • 2 garlic cloves diced
  • 2 cups pasta sauce I used my zero point veggie pasta sauce
  • 2 cups water
  • 3 cups of pasta Included picture of my brand, SP for pasta was 24 to compare
  • 1/3 cup grated parmesan
  • 1/2 cup reduced fat shredded mozzarella

Instructions
 

  • In a large frying pan or skillet (I used a saute pan) cook your ground chicken, add in a dash of salt & pepper and 1 tsp italian seasoning. Remove chicken from pan once it is cooked.
  • Add in diced garlic *I sprayed the bottom of the pan with a little cooking spray, let the garlic cook a few minutes then add in tomato sauce and water. Bring to a boil, then turn down to medium-low.
  • Add in pasta and chicken, let cook for about 20 minutes or until pasta is cooked to liking.
  • Stir in parmesan cheese, 1 tsp italian seasoning and 1/4 cup of the mozzarella.
  • Top with remaining mozzarella and serve.
  • Makes 6- 1 cup servings, pasta will freeze well.
  • *Feel free to bulk it up by adding in some vegetables, add them when you put the garlic in the pan.

  1. In my town all I can find is regular pasta how does that change the points

      My guess is it won’t affect it much I did list the points for my pasta in the recipe so you can compare

      Hi Sarah I use the one on the WW app.. I build the recipe to figure out freestyle points, then I also build the recipe in My Fitness Pal to get the nutritional numbers, I then run those numbers through the WW app calculator to get the old SP values, if the recipe has fruits/veggies in it (which are free on old SP/PP) I enter the nutri numbers before those ingredients are worked into the equation if that makes sense 🙂

      Hi Sarah, you are adding the pasta to the pot uncooked as it is a one pot recipe so it will cook when you add it 🙂

    Have you found a low point pasta sauce that you would recommend if you dont have the time to make your zero point pasta sauce first?

      Hi Natalie, not really, they are all pretty standard, best advice is to just scan away at the grocery store and you might find a hidden gem haha

  7. If I use your home made pasta sauce does that change the points at all for blue program?

          Hi Melissa, that would depend on your likely, if you prefer soft-cooked veggies then yes cook them, I add them in step #3

  8. Ready to make this! I’m using garden delight veggie spaghetti it’s 12oz per box so I would use two boxes correct?

      that 24 you are seeing is the smart points for the amount of pasta used which was 3 cups dry

  9. Sounds so good! I am thinking about adding some breadcrumbs on top to be similar to chicken parmesan. Do you think this would work? Or is that a bad idea? ?
