Lightened up apple cranberry crisp

I love a good apple crisp, it is one of my favorite desserts to order if I am ever dining out. With the holidays approaching I made this lightened-up apple cranberry crisp and it is the perfect addition to any holiday table. Simple to make with just a few ingredients that you probably always have on hand, the recipe serves 6 at 6SP on both blue & green programs and 5SP on the purple program.

6SP blue & green, 5SP purple/4PP
  • 6 large apples, peeled and sliced
  • 2 cups fresh cranberries
  • 1 Tbsp fresh lemon juice
  • 1 tsp vanilla
  • 2 Tbsp flour
  • 2 Tbsp brown sugar
  • ½ cup flour
  • ½ cup + 2Tbsp oats *quick oats work fine
  • 2 Tbsp brown sugar
  • ¼ cup chopped walnuts
  • ½ tsp nutmeg
  • 3 Tbsp light butter, melted
  1. Preheat oven to 350F and spray a 9 inch baking dish with some non stick spray.
  2. Peel and slice the apples, any apples will work.
  3. Add sliced apples and cranberries to a bowl. Add in the 2 Tbsp of flour and brown sugar, lemon juice and vanilla and stir well.
  4. Place fruit mixture into the baking dish.
  5. In a small bowl mix together the crumble topping, flour, oats, brown sugar, walnuts, nutmeg and melted butter, mix untill crumbly and then sprinkle on top of the fruit mixture.
  6. Bake in the oven for approximately 45 minutes, till the fruit is tender and the crumble is golden.
  7. Let cool for 5 minutes then serve. Makes 6 servings -approximately 1 cup servings
  8. Store leftovers in the fridge, you can freeze this crisp.
