I love a good apple crisp, it is one of my favorite desserts to order if I am ever dining out. With the holidays approaching I made this lightened-up apple cranberry crisp and it is the perfect addition to any holiday table. Simple to make with just a few ingredients that you probably always have on hand, the recipe serves 6 at 6SP on both blue & green programs and 5SP on the purple program.
Lightened up apple cranberry crisp
5-7PP, 6SP blue & green, 5SP purple
Ingredients
- 6 large apples peeled and sliced
- 2 cups fresh cranberries
- 1 tablespoon fresh lemon juice
- 1 teaspoon vanilla
- 2 tablespoon flour
- 2 tablespoon brown sugar
- FOR THE CRUMBLE
- ½ cup flour
- ½ cup + 2Tbsp oats *quick oats work fine
- 2 tablespoon brown sugar
- ¼ cup chopped walnuts
- ½ teaspoon nutmeg
- 3 tablespoon light butter melted
Instructions
- Preheat oven to 350F and spray a 9 inch baking dish with some non stick spray.
- Peel and slice the apples, any apples will work.
- Add sliced apples and cranberries to a bowl. Add in the 2 tablespoon of flour and brown sugar, lemon juice and vanilla and stir well.
- Place fruit mixture into the baking dish.
- In a small bowl mix together the crumble topping, flour, oats, brown sugar, walnuts, nutmeg and melted butter, mix untill crumbly and then sprinkle on top of the fruit mixture.
- Bake in the oven for approximately 45 minutes, till the fruit is tender and the crumble is golden.
- Let cool for 5 minutes then serve. Makes 6 servings -approximately 1 cup servings
- Store leftovers in the fridge, you can freeze this crisp.
