Ingredients for Griddle Pizza on the Traeger Flatrock

  • 1 can of Pillsbury Pizza Dough:  Ready-made dough that delivers a light, chewy base without the hassle of making dough from scratch.
  • 2 cups shredded mozzarella cheese:  Melts evenly and provides that classic, gooey pizza topping.
  • 10-15 Pepperoni:  Adds a spicy, savory kick to each bite.
  • ½ cup ground beef:  Adds another layer of protein and more texture to the pizza
  • 1/4 cup diced yellow onion:  Gives a sweet, slightly sharp flavor to complement the cheese and pepperoni.
  • 1/4 cup diced green onion:  Offers a fresh, mild onion flavor and a pop of color to the pizza.
  • 2 tsp Smoked Q Rock’s Anytime Seasoning:  Brings the perfect balance of spices to enhance the overall flavor of the pizza.

Instructions for making Griddle Pizza on the Traeger Flatrock

1. Pre-heat the griddle:  To get started, I preheated my Traeger Flatrock on medium-high heat, using some water to judge when it was warmed up.

2. Cook the dough:  Once it is up to temperature, I drizzle on some olive oil, roll out half the Pillsbury pizza dough on the hot griddle surface, and cook for about 2-3 minutes until the bottom is golden and crisp, then flip it over.

3. Build the pizza: Now I build my pizza first with a layer of pizza sauce, then shredded mozzarella, then some pepperoni, ground beef, diced yellow onion, and diced green pepper before finishing off with a heavy layer of mozzarella cheese and sprinkling my Rock’s Anytime Seasoning over the top.

4. Cook the pizza:  Then I used a hood to cover and cook for another 5-10 minutes until the cheese is fully melted and the bottom of the dough is crispy.

5. Remove, slice & serve:  Remove from the griddle, slice, and serve hot.

Variations and Substitutions:

Substitution or variation: The best part about doing pizza is that you can get as creative as you want.  Flip out the sauce for something exotic like salsa or BBQ Sauce.  They kick it up with some special cheese like pepper jack.  And as for the toppings, keep it simple or make it complicated.  Really the possibilities are endless! 

Tips and tricks for making this Griddle Pizza on the Traeger Flatrock

Part bake the Dough:  This is a really important step when you use these pre made doughs.  That quick hard top made by part baking a side gives the crust extra firmness that is a great base to place the ingredients on.  It keeps the ingredients from soaking through and creating a mushy finish.

Use a Lid: I like to cover the pizza with a large lid or pan after adding toppings to help the cheese melt evenly without overcooking the bottom.

Edge Seasoning: If I decide not to go edge to edge with the toppings, I like to brush the crust with olive oil and then sprinkle some of my Rock’s Anytime Seasoning for an extra flavorful bite along the edges.
