If you’re looking for an easy comfort food casserole, this Sloppy Joe Bubble Up is for you. It’s low in Weight Watchers points, but hearty enough to feed you and the family. And (my favorite part) it’s not as messy as an actual Sloppy Joe. You get all the taste without the mess. It’s a great dish for kids because of that. 

This Sloppy Joe Bubble Up is made with ground chicken rather than ground beef to save some calories and Weight Watchers points. With all the other ingredients added, you won’t miss the ground beef! Melted cheese, buttery biscuits, spices, and ketchup help bring the flavor you want from a Sloppy Joe-inspired meal.

As stated above, you can enjoy this meal with a bowl and fork, rather than a sandwich that just falls everywhere. It’s much more feasible to feed kids this way. You’ll all enjoy it!

Whether you’re having this for lunch or dinner, you’re getting a whopping 35 grams of protein per serving. Without going over 300 calories! It’s basically a magic meal for weight loss. 

You can make the Sloppy Joe sauce with pantry staples. 

Rather than buy canned Sloppy Joe sauce that is filled with carbs, this recipe details how to make it at home, from scratch. You’re saving yourself from a lot of sugar and carbs this way. 

Ingredients you need to make Sloppy Joe Bubble Up: 

  • 1.5 lb Fat-free ground chicken, weighed raw
  • 1 (7.5 oz) packaged biscuit dough. The Walmart Great Value brand has 10 small biscuits in the roll and they come in 4 packs. One pack weighs 7.5oz. 
  • 2 garlic cloves, diced
  • ½ cup chopped onions 
  • 2 cups reduced-fat pasta sauce 
  • ¼ cup reduced sugar ketchup
  • 1.5 tablespoon Worcestershire sauce
  • 1 tablespoon brown sugar
  • ½ tablespoon mustard
  • 2 teaspoons chili powder
  • 2 teaspoons Italian seasoning
  • ½ cup reduced-fat mozzarella cheese

How to make Sloppy Joe Bubble Up (step by step): 

  1. In a large pan, brown the ground chicken. Since the chicken is fat-free, I recommended spraying the skillet with nonstick cooking spray to help it cook well. Add in the garlic and onions once the chicken is cooked through. 
  2. Stir in the pasta sauce, ketchup, Worcestershire sauce, mustard, sugar, and seasonings. Let it simmer on low for 5 minutes.
  3. Spray a large 9×13 casserole dish with some nonstick cooking spray and preheat the oven to 350F.
  4. Cut the 10 small biscuits into 6 pieces for each biscuit. Slowly stir them into the chicken and sauce mixture, then pour the entire thing into the casserole dish. Be sure to spread out the biscuits in your dish so you don’t have too much in one area.
  5. Bake it in the oven for 30 minutes. Remove it from the oven, sprinkle with cheese, and return to oven for an additional 12 minutes. 
  6. Makes 6 servings. Enjoy!

Different ways to change up this recipe: 

  • You can use extra lean ground beef if you prefer. Just make sure to adjust the points. 
  • If you’re in a pinch, you can use a canned Sloppy Joe sauce, but again, make sure to adjust for the extra points. 
  • Top it with freshly chopped oregano and parsley for bright Italian flavor! 

Tips and Tricks for Making Sloppy Joe Bubble Up: 

  • G-Hughes is a great sugar-free ketchup brand. 
  • Sloppy Joe Bubble Up is best right after it’s cooked, but it will stay good in the fridge for up to 5 days. 
  • This casserole freezes well. Just make sure to wrap it tightly in Saran wrap and it’ll last for up to three months in the freezer.

  2. Hi, Kate – This looks good. I’d probably need to freeze half since we’re only a two person household. Is it better to freeze this cooked or uncooked? Generally I freeze casserole before baking, but I have my doubts about freezing the raw biscuit dough. Any tips? Thanks.

    1. Hi Erica – I’ve frozen all the cooked bubble ups from DMS (minus the breakfast one) and they all taste great! I used to put it in the fridge the morning of but recently go right from the freezer to the microwave and it works just fine. I usually make a few of them, portion, and freeze so I have dinners ready for when I’m taking a graduate class.

  6. I made this tonight and used ground turkey instead of chicken. It was delicious! I used the 9×13 pan and it doesn’t look as pretty as yours. My biscuits were higher than everything else. I think next time I’ll use a 9×9 pan. Any thoughts on that?

I told my hubs I was trying a new recipe for dinner and he questioned me endlessly about the bubble up because he ALWAYS resists trying something new. Bottom line ……. he ate 3 servings (and I thought I would have lots of leftovers to freeze). Now, he can’t wait for me to make some of the other bubble up recipes.
