Although nothing beats a warm bowl of soup on a cold winter day, I will enjoy it just as much on a hot summer day (in air conditioning of course haha). I typically make soups in my crock pot but you can just as easily make them in a pot on the stove. If you want a hearty creamy soup, this bacon cheeseburger soup will not disappoint!  

I used ground chicken to keep points low but you could swap out for ground beef if you don’t mind spending some extra points. This is probably one of the creamiest soups I’ve made and I was instantly in love with it. Hash brown potatoes work great in it and keep it simple. Bacon Cheeseburger – but healthy! 

While a bacon cheeseburger can be delicious, it’s definitely not the healthiest option. It can be extremely high in fat and calories. This soup recipe gives you all the bacon cheeseburger flavor, but for just 5 grams of fat and 211 calories per serving. 

It’s healthy, hearty, and creamy. 

Like I said, there’s not much better than a hearty, creamy soup. A bit of flour helps thicken this soup up, and the base is made of skim milk, reduced-fat cheese, and light butter. 

It’s a great family dinner option. 

The full bacon cheeseburger soup recipe makes 12 cups, so it’s perfect if you’ve got a family to feed. It also has the crockpot do the bulk of the work, so it’s excellent on busy weeknights. 

Ingredients you need to make Bacon Cheeseburger Soup: 

  • 1 lb fat free ground chicken, weighed raw
  • 3 cups frozen hash browns *See the beginning paragraph for the ones I use. 
  • 1.5 cups chopped carrots
  • 1.5 cups diced onion
  • 4 cups chicken broth
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • 2 teaspoon basil
  • 6 slices cooked and crumbled Oscar Mayer center-cut bacon
  • 1 cup reduced-fat shredded cheese – any kind will do
  • 2 tablespoons light butter 
  • 3 tablespoons all purpose flour
  • 2 cups low-fat, skim milk 

How to make Bacon Cheeseburger Soup (step by step): 

  1. Cook the ground chicken in a pan on the stove and drain. Add the chicken, hash browns, carrots, onions, chicken broth, salt, pepper, garlic powder, onion powder, and basil to a crock pot. Stir well, and cook on high for 3 hours, or low 6 hours.
  2. About 15 minutes before the cooking time is up, make the roux that will thicken the soup. Cook the bacon at this time if you have not already.
  3. To make the roux, in a pan over med-low heat on the stove melt the butter, and add flour, and stir. Let it cook until it’s bubbly, and you can smell it. You don’t want it to turn brown. Slowly start to whisk in the milk. Stir continuously for about 5-10 minutes until sauce thickens. Once the sauce is at a creamy texture, add it to the crock pot. Then stir in the cheese and crumbled, cooked bacon.
  4. Let the bacon cheeseburger soup cook for another 20 minutes to melt all the cheese.
  5. Serve warm and enjoy!

Different ways to change up this recipe: 

  • If you’re short on time, you can use a sprinkle of bacon bits instead of cooked bacon. 
  • As stated above, feel free to use extra lean ground beef if you prefer. The ground chicken just helps it stay low in points. It’s still delicious! 
  • To lower the points even more, you can take out the hashbrowns and add diced cauliflower instead. It gives the same texture as potatoes without all of the calories, carbs, and points. 

Tips and Tricks for Making Bacon Cheeseburger Soup: 

  • Feel free to add in some celery along with the diced onion and chopped carrots. I choose not to as I am not a fan. If you do then maybe add a little extra broth. 
  • This soup will freeze well! You can freeze individual portions in zip-loc bags, then pull a serving out as needed.  
  • Store bacon cheeseburger soup in the fridge for up to 5 days.

  1. I wish you had mentioned that the hash brown potatoes are cubed and not shredded. Hashbrowns are shredded here and there all they sell in the store so that’s what I bought. Also, you should specify on the recipe title that this is a slow cooler recipe. I went to make it for dinner and realized when it was way too late. You should also provide stovetop instructions. Finally, how exactly is this cheeseburger soup made with ground chicken??

Hi Cindy.. well in instruction number 1) it does say to use your slow cooker… I apologize about the hash browns however I think it is pretty clear in the picture how they look and I link in the opening write up to the ones I use..here is Canada we typically only sell cubed, how am I to know that where you are they are all shredded?? And lastly a cheeseburger can be made with any kind of ground meat and if you had read the opening write up I say right in it that I used ground chicken to keep points low but you could easily swap out for beef if that is your preference!!

  2. Wow, Cindy. Sorry, but that’s an awful lot of criticism that could have been avoided if you had just read the complete recipe and looked at the pics or clicked the links. Kate puts a heck of a lot of work into these recipes and is kind enough to share with us all. And again, I’m sorry, I dont think it should be difficult to figure out how to change this from crockpot to stovetop. This looks fabulous, and I for one want to thank you Kate for another great idea!!!

  3. This was super tasty! I actually had forgot that was crock pot recipe and easily made it on the stove. I just brought it to boil then simmered for 20 minutes and put on low while I made the rye and cooked bacon. Suoer easy. I also didnt notice the cubed potatoes and made with shredded turned out great. Finally doctored it a but based on what I had in the house and used yellow onion instead of red, Turkey bacon instead of pork, added a yellow pepper for additional color and flavor and added sweet and tangy bbq seasoning. It is soooo yummy! Great creamy soup for little points! Thanks for the recipe!

  4. This was AMAZING! I did add the celery and I only had shredded hashbrowns — loved it. Oh and a sprinkle of Trader Joes Onion Salt on top with fresh chopped green onions. NO ONE would know this is diet. Thanks so much 🙂

  6. I made this today and it was yummy. I added some extra chicken broth and it wasn’t as thick. I will not do that next time so it will be thicker. Husband and kiddos liked it also.
