Air Fryer Sweet Potato Cubes with dipping sauce

Equipment

  • Air fryer

Ingredients 

  • 1 lb sweet potatoes , cubed
  • 1 tsp olive oil
  • 1 tsp herbal salt
  • 1 scallion sliced, optional

Optional Dipping Sauce

  • 1/2 cup ketchup
  • 1/4 cup vegan mayo
  • 1 tsp mustard

Instructions 

  • Preheat the air fryer to 400 degrees F.
  • Toss sweet potato cubes with olive oil and arrange them in the air fryer cooking basket. Place them in a single layer in the air fryer basket.
  • Cook sweet potato cubes for 12 minutes, shaking the basket halfway through the cooking time, until they are crispy and golden brown. Toss warm sweet potato cubes with herb salt. 
  • In the meantime, whisk all the sauce ingredients. Serve sweet potato cubes with the sauce on the side. 
  • Garnish with sliced scallions, if desired. Bon appétit!
