The frostier it gets outside, the more I crave a decadent casserole full of hearty chunks of vegetables and meat in a velvety-rich sauce. Unfortunately, it’s easy to get a side of excess calories with your slice of cozy comfort. Instead of rolling the dice on your diet, try these twelve delicious and seasonal options instead. While they taste deceptively sinful, they all come in at just a few Weight Watchers points per serving and are some of my go-to meals when the weather turns frosty.

1. Doritos Casserole

It’s shocking to think that this tasty casserole crowned with Doritos is waistline-friendly, but it’s totally true. Each serving is a mere five Weight Watchers points. This casserole gets its heft and flavor from fiber-rich black beans and tangy Greek yogurt, and salsa adds a superb fiery note that works well with the creaminess of the yogurt and Mexican cheese blend. I like to use ground chicken well-seasoned with taco spice and canned diced tomatoes and chilies for that extra kick. Top the whole thing with Doritos, and you’ll be set for a great weeknight meal.

2. Slow Cooker Green Bean Casserole

You’ll want to make this Thanksgiving favorite all month long once you find out how easy and diet-friendly it is. At just two points a serving, it’s a clever riff on an old classic and, in my opinion, has even more flavor than the original. Simply start with fresh green beans and fat-free cream of mushroom soup, add in a splash of milk and a touch of garlic powder, and top with homemade crispy onions.

3. Holiday French Toast Cassеrolе

You don’t have to wait for a holiday to make this epic French toast casserole that’s perfect for any relaxing weekend breakfast or seasonal brunch. Plus, it’s just three Weight Watchers points per serving. Each decadent spoonful is full of bright, sliced peaches and custardy base, and you can keep things light by using almond milk, Stevia, and whole wheat bread. A touch of vanilla extract and a few warming spices bring the whole dish home.

4. Bourbon-Infused Sweet Potato Casserole

This nine-point casserole is rich and boozy, with sweetness from the sweet potatoes, maple syrup, and vanilla and layers of flavor thanks to toasty spices like cinnamon and nutmeg. Laced with bourbon and buttery goodness, this casserole is the ultimate feel-good meal. You can also top the whole thing off with crispy pecans and brown sugar for a fabulous contrast.

5. Pizza Casserole

My kids crave this casserole all winter long, and since it’s only six Weight Watchers points per serving, I’m more than happy to oblige them. I also love how versatile it is because I can clean out my fridge and sneak in some extra veggies for a nutritional boost. I like to use corkscrew pasta, but you can make it with anything you have on hand. Each bite is full of marinara, tasty pasta, pieces of pepperoni, sausage, and vegetables for a meaty, hearty dinner. 

6. Breakfast Casserole

This is my go-to Sunday morning recipe and a great way to treat your family before the start of another long work or school week. Plus, it reheats well so that you can snack on it all week, and it is five Weight Watchers points per serving. Cubed ham, eggs, and frozen hashbrowns make up the bulk of the casserole, and you can top the whole thing off with some cheddar cheese for a bubbly, oven-crisp finish that will get everyone out of bed.

7. Sweet Potato Black Bean Enchilada Casserole

Black beans and sweet potatoes are a match made in tasty heaven, and this four-point casserole perfectly showcases these two great ingredients. Plus, sweet potatoes are full of nutrients, and black beans are fiber-rich, so you’ll stay full and satisfied for longer. Cubed sweet potatoes, bell pepper, canned beans, and corn get a fiery makeover with taco seasoning and red enchilada sauce, and mozzarella cheese mellows the whole dish out nicely. I serve mine with avocado and a dollop of salsa on the side.   

8. Mexican Casserole

Next time you feel like ordering takeout, make this five-point casserole instead. It’s got all of your favorite Tex-Mex flavors, crispy tortilla, and good-for-you ground turkey that will keep your calorie count low while still giving you all the flavor you crave. Plus, you probably have everything you need for this casserole right in your refrigerator and pantry. It’s an easy weeknight dinner, and you can have it on the table in less time than it takes the delivery guy to arrive.

9. Zucchini Casserole

This super simple zucchini casserole is an excellent way to use up leftover produce and comes in at a lone one Weight Watchers point per serving. Packed with fresh zucchini, zesty feta cheese and topped with crisp Panko crumbs for a textural twist, this veggie-heavy casserole is easily one of my most frequent recipe flyers. All you need are a few zucchini, three eggs, some fat-free feta and mozzarella, Greek Yogurt, Panko breadcrumbs, flour, and a few seasonings. The yogurt and feta are two of the superstars of the dish, imparting tons of flavor while still keeping the fat content low, making this a healthy and utterly delicious dish. 

10. Cornbread Pudding Casserole

I like to serve this casserole as part of a larger brunch or dinner menu, but it’s just as good as a standalone dish for those cozy November evenings when you want to curl up on the couch with a plate of comfort food. The original rendition of cornbread pudding casserole is high in both calories and fat, but this slimmed-down version is only four Weight Watchers points per serving, thanks to a creamy and tangy boost from the Greek yogurt. I like to use a mixture of creamed corn and whole corn kernels for extra texture and taste.  

11. Tuna Casserole

Tuna casserole is the gold standard of nostalgic comfort foods, and this two-point version gives you all of that homestyle flavor with a fraction of the calories and fat. I like to use whole wheat egg noodles as my healthy-carb base and swap out cream of mushroom soup for sliced mushrooms. Greek yogurt and chicken broth give the casserole a velvety base, and the bigger mushroom pieces are just so much nicer. I also pop in some peas for that traditional casserole look and taste and top the whole thing with a combination of breadcrumbs and Parmesan cheese for a beautifully bubbly crust that’s a joy to cut into.

12. Bacon Cheeseburger Casserole

Forget Hamburger Helper; this seven-point casserole hits on all the high points of a cheeseburger and is only seven Weight Watchers points a serving. It’s full of perfectly seasoned ground beef and crispy bacon, all resting on a delicious bed of biscuits. Topped with reduced-fat shredded cheddar cheese and a bit of extra bacon, it’s a wonderfully textured and tasty treat that makes a great mid-week meal.

November is casserole season, and these twelve options more than knock it out of the park. From Tex-Mex-inspired favorites to veggie-heavy spins on your most cherished childhood dishes, there’s no shortage of fabulous recipes to treat yourself and your family to this winter.
