They have very thin slices throughout, giving them an impressive look.

These Hasselbeck sweet potatoes are incredibly healthy, with hints of fresh garlic, parmesan cheese, and an assortment of herbs. For instance, they have thyme, sage, rosemary, and oregano.   • 32 oz Sweet potatoes
  • 4 tbsp Light butter substitute
  • 2 tbsp Parmesan cheese, grated
  • 3-4 Garlic cloves, minced
  • Salt, to taste
  • ¼ tsp Black pepper
  • 2 tsp Dried thyme
  • ¼ tsp Ground sage
  • 1 tsp Dried crushed rosemary
  • 1 tsp Dried oregano

Instructions for making Weight Watchers Hasselbeck Sweet Potatoes

  1. Wash and pat dry the sweet potatoes. Cut their ends off. Position a sweet potato on a cutting board, placing butter knives or cooking spoons along its longer edges. Carefully slice crosswise with a sharp knife, stopping when it reaches the knife to maintain the potato’s shape. Continue with the rest of the potatoes.
  2. In a small bowl, mix about 3 tbsp of the light butter with the herbs and garlic. Use your hands to rub the mixture all over the potatoes. If you have extra butter to use up, you can stuff some of the crevasses with it. Sprinkle the sweet potatoes with salt all over.

3. Place the sweet potatoes in a greased baking dish and bake for 45-60 minutes, covering them for the first 30 minutes. (cooking time will vary depending on how big the sweet potatoes are). Check their doneness with a fork to ensure they are fork-tender throughout.

4. Brush the remaining butter on the sweet potatoes and sprinkle with parmesan cheese. If preferred, place the baking dish under the broiler to brown the parmesan on top.

Variations and Substitutions

  • Hasselback Sweet Potatoes with Maple Syrup: you can create a different version that is still savory but more on the sweet side. I would personally cut back a little bit on the herbs and then add some Maple syrup to the butter mixture. Brush it onto the sweet potatoes. Once they are done cooking, sprinkle them with toasted, chopped pecans.
  • Butter vs Oil: If you don’t want to use a light butter substitute, you can always use vegetable or olive oil, too. You just need some type of fat to coat the outside of the sweet potatoes, so they get a nice crispy skin and don’t dry out too much.
  • Cheese Type: Feel free to top these sweet potatoes with other kinds of cheese, such as mozzarella cheese, cheddar cheese, feta cheese, or goat cheese.
  • Seasoning Options: You can always use Italian seasoning to make it easier on yourself. Feel free to experiment with different seasonings, too. For a spicy kick, try adding some smoked paprika or cayenne. You can also use garlic powder instead of using minced garlic.
  • Hasselback Sweet Potatoes with Bacon: These sweet potatoes would be delicious topped with crispy bacon bits! You can cook the bacon separately on the stovetop while the sweet potatoes cook and then top them with the crumbled bacon right before serving.

Tips and Tricks for Making Weight Watchers Hasselbeck Sweet Potatoes

  • Transfer any leftovers to an airtight container and keep them in the refrigerator for three to five days. You can also freeze any leftovers and then reheat them.
  • The thinner you make the slices, the more evenly and quickly the sweet potatoes will cook. The cooking time will also vary depending on the size of the potatoes. If one of the sweet potatoes is done before the others, you can simply remove it from the baking dish and place the other ones back into the oven.
  • The light butter substitute won’t be super easy to brush onto the sweet potatoes before baking, which is why I suggest rubbing it onto the sweet potatoes with your hands instead to get an even coating.
