This Nutella pancake sandwich is the kind of indulgent weekend breakfast that makes everyone excited to get out of bed. Fluffy pancakes sandwiched around a generous spread of Nutella, with sliced bananas or strawberries tucked inside — it’s part breakfast, part dessert, and completely over-the-top in the best way. It takes the same time as a regular stack of pancakes but feels so much more special. Save it for a lazy Saturday when you want to make the morning memorable without a complicated recipe.
- Swap: Use powdered peanut butter mixed with a touch of cocoa and honey as a lower-calorie Nutella substitute.
- Make-ahead: Mix and refrigerate the pancake batter overnight; pour and cook fresh in the morning for the fluffiest result.
- Storage: Pancakes keep in the fridge for 3 days or freeze in a stack with parchment between each one for up to 1 month.
- Variation: Add sliced strawberries or banana coins inside the sandwich alongside the Nutella for fresh fruit contrast.
- Serving: Cut the sandwich diagonally and serve with a drizzle of maple syrup and a dusting of powdered sugar.
This is one of my favorite decadent breakfast and it is super easy to make. It’s a sandwich and pancakes all in one! Just 7 smart points..Treat yourself to one today, would also make a great dessert..

cookie butter pancake sandwich

Ingredients
- 2 slices of low calorie bread, I use Smart Lite 35, bought in the U.S, 2 pieces = 2SP
- 1/2 Tbsp nutella
- Pancake mix, I used 1/4 cup Kodiak cakes, mixed with 1/4 cup of water
- 1/2 square of Lindt 70% dark chocolate, melted for your drizzle
- Fresh strawberries
Instructions
-
Warm a pan over medium on stove, coat with a little cooking spray.
-
Stir your pancake mix and water together.
-
Spread your nutella on your bread, and pour your pancake batter over your sandwich to coat both sides and edges.
-
Cook on skillet as you would pancakes, make sure you get edges as well, sometimes you need to hold the sandwich, just so the pancake batter cooks.
-
Cut in half, top with strawberries, chocolate drizzle and whip cream. To melt chocolate I do it in 30 second intervals in microwave turning each time.
-
When using 1SP bread (even for 2 pieces) the sandwich is 7 smart points

I made this today for my breakfast without the drizzle or the strawberries. I wanted something quick and easy but also decadent and delicious, this 100% did not disappoint! It is such a great way to enjoy a high points spread like Nutella. I will be adding some banana slices to the interior next time to see how that goes, this will be a regular in my rotation. Thank you for such an incredible idea/recipe.
Thanks Kim! glad you like it!
