  1. I love Kodiak mixes and will look for the Pumpkin Flax mix next time I go grocery shopping. Looking forward to trying these delicious-looking muffins. Thank you for the recipe!

  2. These look awesome! I will be trying them this week end. I just wondered, do you think these would freeze well?

    • Drizzle Reply

Yes I think they will freeze fine πŸ™‚ hope you enjoy them

  3. Hi, I’ve only tried 2 of your recipes (this one and the pumpkin spice cream cheese) and I noticed you don’t include salt in your recipes. Have you tried salt and taken it out due to taste/texture or is it a health concern on your part? I was going to try them again with salt to maybe boost the flavor a bit. Thoughts?

Hi Amy, nope I never cook/bake with salt .. just a personal preference is all..

I only have the regular Kodiak mix. What do you think about subbing canned pumpkin for the applesauce?

    • Drizzle Reply

Sorry for the late reply, not sure if you tried it.. I would think it would turn out

This recipe looks great! Have you found Kodiak mixes in Canada, or do you order online?

    Thank you!

I actually cross the border and shop since I am close but you can order online through the Target website, they deliver to Canada (at a cost of coarse lol) I have never found them in Canada

  6. next time you are at target, check out the mini waffle maker, its $10. I bought the kodiak pancake/waffle mix and just made 2 mini waffles, they were great!!
I follow you on fb and love all your recipes!!!

Hi thanks for the suggestion on the waffle maker! I was looking for a recipe, saw this and your suggestion is like a double bonus. Thank you, thank you, thank you

  7. Thanks for this recipe! I don’t have the pumpkin spice Kodiak mix, but I followed the recipe using the peanut butter mix (minus the pumpkin spices) and they turned out perfectly!! I wasn’t crazy about the peanut butter mix as a waffle or pancake, but it is awesome as a muffin.

Hi Katelyn, good to know as I too don’t really care for the PB mix, I will have to try it thanks πŸ™‚

    • Drizzle Reply

No, it is the same, there is no “zero” foods in the recipe that would alter the points

    • Drizzle Reply

Yes, this was made before freestyle when eggs still had points so I typically would use egg whites to keep points down
