When I eat kiwi I normally just do the regular slice & scoop method. I would simply cut the kiwi in half and scoop the flesh out with a spoon! However I’ve been more meticulous recently because I’ve been grilling it! As a matter of fact grilling fruit is my new favorite snack! I grilled up a pineapple alongside avocado and it was heavenly. Everyone will adore the flavors and it’s amazing with a cold glass of almond milk or even a mimosa!

Kiwi recipes with rice paper are delicious. Here is what you need to make this one: 1/2 cup cooked medium grain rice, 2 tablespoons of coconut milk, and 4 sheets of Vietnamese rice paper. For the fruit you will need: 1 kiwi fruit that is peeled and sliced and 1 yellow peach or nectarine that is pitted and sliced! Then just combine the warm, cooked rice with the coconut milk in a bowl and mix. Wet one piece of rice paper then add the fruit and rice and roll!

Need some ideas for kiwi recipes? This is one of my favorites quick and easy snacks using kiwis. Enjoy!

Ingredients 

  • Wonton wrappers
  • 1 tsp sugar free lime jello powder
  • Fresh sliced kiwi
  • Fresh blueberries

Instructions 

  • Preheat oven to 350F
  • Mix your jello powder with 3 Tbsp boiling water and place in fridge for 5 minutes. Then add 4 Tbsp cold water and mix.
  • Let set in fridge for approx. 20 minutes, you want it to be almost set but not quite. Meanwhile place your wonton wrappers on the baking sheet and spray with cooking spray.
  • Bake in oven for 6 minutes turning over half way. Let wontons cool then add your sliced kiwi and blueberries. Using a pastry brush, brush on your almost set jello. Place in fridge for at least 20 minutes to let jello fully set. 2 fruit crisps for 1sp/pp.
