Breakfast stromboli

Healthy breakfast stromboli
7SP blue, green & purple/7PP per serving

Ingredients 

  • 1 package of pillsbury pizza dough
  • 1/3 cup diced peppers, I used green
  • 1/3 cup diced onion
  • 6 slices center cut low point bacon, cooked and crumbled
  • 1 cup frozen home fries, to see the ones I used they are in week 1 of my product reviews
  • 1 cup egg whites, I use from the carton
  • 1/2 cup reduced fat shredded cheese
  • Dash of salt and pepper
  • Seasoning of choice, I used Trader Joe’s everything but the bagel seasoning

Instructions 

  • Cook your bacon, drain and set aside, if you can’t find low point center cut bacon try using turkey bacon or bacon crumble you can buy for salads usually sold with the dressing, points are generally low.
  • Spray a large frying pan with some non stick cooking spray, place on stove over medium heat. Dice your pepper and onion and add to your pan, then add your home fries. Add in a dash of salt & pepper. Cook for approx 15 minutes stirring often.
  • In a separate pan also sprayed with some cooking spray cook and scramble your egg whites.
  • Place your home fries mix and scramble egg whites in a bowl. Add in crumble bacon and seasoning of choice and mix well.
  • Preheat oven to 375F, use a large baking sheet lined with parchment paper.
  • Roll out your pizza dough so it is approximately 14×9 inches.
  • Using a pizza cutter or knife (I find pizza cutter works best) you want to make cuts down each side of the dough but leaving the middle uncut. Make sure your cuts line up with opposite side (see picture)
  • Spoon your mixture into the middle of your dough, top with your cheese then braid your cut dough pieces over top. I promise it is easier than it sounds!
  • Brush some egg whites on top of dough and bake in oven for approx 25 minutes or until golden brown.
  • Cut into 6 equal servings, I find it best to cut in the middle then cut each piece into 3 equal pieces.
  • Makes 6 servings at 7 smart points per serving on all 3 MyWW programs (7 point plus, old WW program) it will freeze well.
