18 Perfect Sauces for Chicken

Servings: 2 people

Fiesta lime chicken on clear plate

Ingredients 

  • ½ cup of marinara sauce, no sugar add, 140 g.
  • ½ cup of grated mozzarella cheese, 60 g.
  • 300 g of chicken breast, deboned and skinless
  • cup of plain non fat yogurt, 85 g.
  • 6 florets of cauliflower, 250 g.
  • 1 lime
  • 1 tbsp of soy sauce
  • 1 tbsp of Worcestershire sauce
  • ½ tsp of salt
  • ½ tsp of ground black pepper
  • 1 tsp of taco seasoning
  • 1 tsp of stevia
  • A bunch of coriander

Instructions 

  • Marinate the chicken breast with lime juice, soy sauce, Worcestershire sauce, salt, black pepper, and taco seasoning. Allow it to marinate for at least 30 minutes.
  • Preheat the oven and place the marinated chicken breast in a baking dish. Bake it until golden and cooked through.
  • In a separate bowl, mix the marinara sauce, yogurt, and stevia to make the sauce.
  • Remove the chicken from the oven and generously coat it with the sauce. Sprinkle grated mozzarella cheese over the top.
  • Return the chicken to the oven and broil until the cheese is melted and bubbly.
  • Cut the broccoli florets and use them to make cauliflower "rice". Sauté the "rice" in a pan with 2 tablespoons of water and 2 tablespoons of marinara sauce.
  • Prepare the pico de gallo by combining diced tomatoes, onions, jalapenos, cilantro, lime juice, and salt.
  • Serve the Fiesta Lime Chicken over the cauliflower "rice" and top it with pico de gallo.
