Rosemary Garlic Brine
Ingredients*
1-gallon water
¾ cup kosher salt
½ cup granulated sugar
Two tablespoons of dried rosemary
One tablespoon caraway
One tablespoon granulated
Two teaspoons of freshly ground black
*These ingredients will work with a regular-size roasting chicken. For larger poultry, you’ll need to increase the volume of your brine. Example: I use this brine at Thanksgiving, but use five times the amount of each ingredient.
