Turkey Taco Lettuce

Ingredients

  • For the filling:
  • 1 red onion, diced, 90 g.
  • 300 g. ground turkey breast, 98% fat free
  • 2 cloves garlic, minced
  • 2 tablespoons taco seasoning
  • 1 teaspoon olive oil
  • For the tacos:
  • 1 cup cottage cheese, 240 g.
  • Romaine lettuce leaves, 2 large lettuce, 300 g.
  • ½ cup corn kernels, 90 g.
  • 1 red bell pepper, diced, 90 g.
  • 2 tomatoes, diced, 125 g.

Instructions

  • Begin by seasoning the ground turkey breast with salt, pepper, garlic, and taco seasoning. Let it marinate for at least 30 minutes.
  • In a large skillet, heat olive oil over medium heat. Add the diced red onion and cook until translucent and fragrant, about 3-4 minutes.
  • Add the marinated ground turkey to the skillet with the onion and cook, breaking up the meat with a wooden spoon, until fully cooked and golden brown, about 6-8 minutes. Ensure the turkey is thoroughly cooked before removing from heat.
  • Meanwhile, prepare the taco ingredients. Wash and dry the romaine lettuce leaves and place them on a large serving platter. Place the cottage cheese, corn kernels, diced red bell pepper, and diced tomatoes in individual bowls so each person can customize their own tacos.
  • Once the turkey filling is ready, remove the skillet from the heat and assemble the tacos. Take a romaine lettuce leaf and place a portion of the turkey filling in the center (if the taco filling is already cold).
  • Then, add a tablespoon of cottage cheese and a handful of the other prepared ingredients.
  • Repeat this process with the remaining romaine lettuce leaves and turkey filling until all the tacos are assembled.
  • Serve the Turkey Taco Lettuce Wraps immediately and enjoy this delicious and healthy alternative to traditional tacos. Bon appétit!
