Huevos Rancheros is a delicious recipe that is easy to convert to weight watchers.

It features fried eggs served atop corn tortillas, with a flavorful bean puree seasoned with chilies and onions in the middle layer. To complete this hearty dish, it is topped off with a smoky tomato salsa that adds a delightful finishing touch.

Unlike some of the quick breakfast options we often suggest, Huevos Rancheros is not a ten-minute affair.

Rather, it’s a complete, abundant, and, above all, filling breakfast option. This time around, we’re giving the recipe a twist by reducing the amount of oil used for frying and using the ingredients more consciously.

Why you should try Huevos Rancheros

Do I have to say anything more than ‘delicious breakfast’ for just 2 Weight Watchers points? If you still need more reasons, here are 4 more.

1. It’s hearty, making it perfect for a leisurely weekend brunch that will likely segue into a late lunch because this dish will keep you satisfied all day.

2. As a foodie, I not only love experimenting with flavors but also textures, and the combination of toasted corn tortilla with creamy bean puree, and the textures of the egg and salsa, make it not only delicious but also intriguing. These textural nuances are complemented by the flavor profiles.

3. The carbohydrate base of this dish (the tortilla) is corn, which is more forgiving in terms of Weight Watchers points compared to breakfasts typically involving wheat.

Ingredients:

Huevos Rancheros Ingredients
  • 4 corn tortillas
  • 4 eggs
  • 1 can (15 ounces) black beans or pinto beans, rinsed and drained
  • 2 teaspoons extra-virgin olive oil
  • 1 finely chopped white onion
  • 2 teaspoon taco seasoning
  • 1 ½ cups (12 ounces) of your favorite red salsa (about 340 grams)
  • 1 tablespoon of lime juice (optional)
  • Salt and pepper to taste 

Optional garnishes: Crumbled Cotija or feta cheese, sliced avocado, additional chopped cilantro, and/or hot sauce (make sure to add the points in if you add these ingredients)

Instructions:

Frying onions in a sausepan

In a saucepan over medium heat, warm one teaspoon of olive oil. Add the finely chopped white onion and cook until softened, about 3-4 minutes. Stir in the taco seasoning and cook for an additional 30 seconds.

Add the rinsed and drained black beans (or cooked beans) to the saucepan, along with the water. Season with freshly ground black pepper to taste.

Cook for about 5 minutes, mashing some of the beans with the back of a spoon. Stir in the lime juice and continue to cook for another 2-3 minutes, until thickened. Remove from heat and set aside.

Spoon cooked beans onto each tortilla

Place each corn tortilla directly on the oven rack and heat them for about 5 minutes or until they are warmed through and slightly crispy on the edges. Keep the warmed tortillas warm by wrapping them in a clean kitchen towel or aluminum foil until ready to assemble the Huevos Rancheros.

In the skillet, heat 1 teaspoon of olive oil over medium heat. Crack each egg into the skillet and cook until the whites are set but the yolks are still runny, about 3-4 minutes. Remove from heat and set aside.

Spoon cooked beans onto each tortilla and topped with a fried egg

Place a warm tortilla on each plate. Spoon a generous amount of the cooked beans onto each tortilla. Top with a fried egg. Spoon the red salsa over the eggs.

Sprinkle crumbled Cotija or feta cheese over the top, if desired. Add sliced avocado, additional chopped cilantro, and/or hot sauce for extra flavor. Serve immediately, and enjoy this delicious and satisfying dish for breakfast, brunch, or any meal of the day!

Variations and Substitutions

Most variations associated with this recipe involve additions; that is, additional ingredients to top it off, and Mexicans are incredibly creative in this regard. Toppings can range from fresh cheese, cilantro, and chilies to diced chorizo or even pork rinds. In any case, all vegetables are welcome, including chilies, cilantro, and freshly chopped onions. If you desire some avocado or sour cream, use them in moderation to avoid adding more points than desired.

Tips and Tricks for making Huevos Rancheros

1. Although I mentioned that this recipe takes a bit longer to prepare than many of our breakfast options, you could make the tomato salsa and bean puree in advance and store them in airtight containers in the fridge; so in the morning, you’ll only need to heat the tortillas and other ingredients in the microwave and prepare the fried egg.

2. To fry the egg with minimal oil, consider these tips: Use a good quality non-stick skillet to prevent the egg from sticking; Don’t heat the skillet too much. You can add a bit of water to the skillet while the egg is cooking to help the egg white set without overcooking the yolk.

3. Absolutely ignore the traditional recipe step of frying the tortilla; it’s completely unnecessary. Toast them on a tray in the oven instead.
