Trader Joe’s is known for having some great deals when it comes to food products or even household products. With so much available, it can be easy to pass up great items! Personally, I think some of their greatest finds can be found in the freezer section. For instance, the frozen salmon burger patties are only two points per patty! But, there is another product that’s even more impressive, one that every Weight Watchers member should undoubtedly stock up on.

The Trader Joe’s Mexican-Style Riced Cauliflower is only one Weight Watchers point per serving! This cauliflower rice features an array of red, yellow, and green bell peppers with pickled jalapenos and diced tomato pieces. It doesn’t only have veggies mixed in; it also has incredible seasonings such as cilantro, cayenne pepper, cumin, garlic, and even some zesty lime juice.

How to Serve the Mexican-Style Riced Cauliflower

What makes this product so appealing to me is its point value and ability to serve as the base for so many different types of meals. For instance, if you grill or bake some chicken breast and serve it over this delicious cauliflower rice bed, you can have a one-point meal! Of course, you can also build upon it by adding other veggies too.

It doesn’t stop there, though; I personally love to turn it into a breakfast hash by serving it with fried or scrambled eggs in the morning. If you have some extra points to use up, you can include this seasoned cauliflower rice in other dishes, such as using it for burrito or enchilada fillings. Honestly, there is so much room for experimentation.

The Convenience of This Trader Joe’s Find

Although plain cauliflower rice is typically a zero-point food, I find that the convenience of this product is undoubtedly worth the one point. I don’t have to spend time chopping bell peppers, tomatoes, and jalapenos or squeezing juice out of limes. Let alone take the time to season it to perfection. The hard work is done for me, and I love that. It also has a long shelf life, so it doesn’t hurt to stock up on it and utilize it when I am busy and don’t necessarily have the time to cook everything from scratch.

This product is healthy overall. Each serving only contains 50 calories and a good amount of calcium, iron, and potassium. And everyone knows that cauliflower rice is fantastic for low-carb eating. I would say that the only downside is the sodium levels, but it isn’t nearly as high in sodium as other prepackaged frozen foods.

Ultimately, WW members can benefit from this product’s convenience and price. It can save the day when you don’t have time to cook. Its zesty, savory flavor profile tastes amazing with various foods, giving you room to experiment and use it differently. And, with a price that low, you just can’t beat it!
