  • 1 cup unsweetened vanilla almond milk, (any milk will work)
  • 2 large eggs
  • 1/4 cup honey
  • 1/2 cup chocolate chips (save a couple of tablespoons for topping the batter before baking)
  • 16 oz white frosting – with a 1M open tip 
  • 6 oz black gel glaze or black frosting 
  • 6 oz pink frosting – with a leaf frosting tip

What Is Kodiak Mix?

Kodiak brand pancake and waffle mixes are perfect for healthy baking. These mixes are high in protein and contain whole grains instead of processed flours. They also have muffin and brownie mixes. These products are made with natural ingredients such as whole wheat flour and oats!

How Do You Fill A Frosting Bag?

  1. First, make sure you have a clean and dry frosting bag. You’ll need to have your piping tip ready and a bag tie or rubber band to secure the end.
  2. Attach the desired tip to the coupler before placing it inside the bag.
  3. Unfold the top of the frosting bag, and place the coupler inside the bag with the wider end going in first.
  4. Use a spatula or spoon to scoop your frosting into the bag. Start with a small amount to avoid overfilling.
  5. Once the bag is filled with frosting, twist the top just above the frosting. This is important to secure the frosting inside the piping bag and it also creates pressure as you pipe. 
  6. Hold the twisted part with one hand and use the other hand to guide and apply pressure to the bag as you pipe the frosting onto your cow cupcakes.

Instructions For The Cupcakes (Step by Step)

  1. Preheat your oven to 350 degrees F 
  2. In a large mixing bowl, combine 2 cups of chocolate Kodiak Mix and 1 cup of unsweetened vanilla almond milk. Whisk until the mixture is combined and smooth.
  3. Then add the eggs and honey and whisk again.
  4. Gently fold in the chocolate chips at the end.
  5. Line a cupcake pan with cupcake liners and fill them almost all the way to the top. Kodiak mix doesn’t rise as much as regular cupcakes.  
  6. Bake them for 15 minutes. 
  7. Take them out of the oven and rest. 

Instructions For The Cow Frosting (Step by Step)

  1. Put each color of frosting in separate piping bags – the pink should be fitted with a leaf tip for the ears 
  2. The white frosting should be in a 1 M open tip to pipe the white base out 
  3. The black gel frosting comes in it’s own little tube with a small opening – this helps you draw the black spots of the cow
  4. Squeeze a few tablespoons worth of white frosting on each cupcake
  5. Use a spatula to flatten it down 
  6. Pipe pink little “leafs” for the ears
  7. Take some extra pink frosting and plop it where the nose would be – use a stick (I used a cake pop stick) to shape the nose by swirling it into a circular motion
  8. Draw eyes with the black gel frosting before shaping the cow spots – gently color the spots in

Important Baking Hacks & Tips

When making your cow cupcakes it’s important to sift the Kodiak mix into the mixing bowl if you don’t want lumps. Kodiak mix tends to be a bit lumpy. You can substitute the honey for maple syrup, but if you substitute it for dry sugar you may need to add a few extra splashes of milk. 

It’s also important to make sure the frosting is the right temperature for piping before you start. It can’t be too warm or it won’t hold its shape on the cupcake. If it’s too cold it will not form the shape in the first place! In fact if it’s cold enough it will be hard to even push out of the piping bag at all! 

Last but not least, Before you start frosting the chocolate Kodiak cow cupcakes make sure they are the right temperature. Cupcakes that are too warm will cause the frosting to melt a little bit and possibly slide off. For this recipe specifically the cow ears won’t hold shape. 

Cow Frosting Decoration Tips & Substitutions 

  • Instead of black gel glaze you can make your own black frosting.
  • You can use brown instead of black frosting to make the cow’s spots.
  • Not good at piping eyes? Use eyeball sprinkle candies! 
  • Want to make the ears pop more? Use two shades of pink (one lighter and one darker) and make two layers of pink leaf ears.

Storage Tips & Hacks 

How do you store your chocolate Kodiak cow cupcakes? Let them cool completely to room temperature. Put the cupcakes in an airtight container. This prevents them from drying out. You can use plastic containers, cupcake carriers, or even airtight storage bags. If you’re stacking multiple layers of cupcakes, put a sheet of parchment paper between the layers. This helps prevent sticking and keeps the frosting nice. They will stay fresh for 3-5 days in the refrigerator.
