Pineapple is probably hands down my favorite fruit! I don’t think anything goes good with it quite as well as coconut does… so I made a pineapple coconut breakfast pie… or anytime of the day pie 😉 Have it for a weekend breakfast treat, or make it for dessert, either way its delicious!! So simple to make with only 4 ingredients, makes 4 large servings at 5 points each.
Pineapple coconut breakfast pie
Ingredients
- 1 7.5 oz package of pillsbury biscuits, the ones in the 4 value pack, if you can't find them then buy the bigger pack and weigh it out
- 1/2 Tbsp white sugar
- 2 Tbsp unsweetened shredded coconut
- 1 cup fresh diced pineapple
Instructions
- Preheat oven to 350F, spray a 8 inch pie dish and set aside.
- Cut your 10 biscuits into 4 pieces each, dice up your pineapple into small chunks.
- Mix your sugar and coconut together in a plastic bag, add the pieces of biscuits about 8 at a time to the sugar/coconut mix and shake up.
- Spread biscuit pieces out in pie dish, if there is any coconut/sugar mix left over sprinkle it on top.
- Evenly spread out your pineapple chunks on top of biscuits.
- Bake in the oven for 25 minutes, cut into 4 pieces and serve warm, each piece is 5sp on all 3 MyWW programs or 4pp.

Hi Vicky.. Welcome to WW 🙂 I have had others in the U.K (where I was born :)) ask me that.. Pillsbury is a refrigerated dough, do you have anything like that over there? Maybe check out http://www.pillsbury.com and you can see what it is and if you can think of something similar.. I guess you could always use a pizza dough, it may be a little higher on points though..
Hi! I just made this, it smells delicious 🙂 I just started WW last week (for the third time, lol) I lost 3.1 lbs this week!! Anywho, I did my own calculation for points. I came out at 10 sp per serving! 35 sp for whole can of biscuits, 2 for sugar, and 3 for coconut. That’s 40, so if you have 4 servings it’s 10. I am just curious how you got 4 sp? I am going to be cutting it into smaller portions. 🙂
Hi April… Yikes.. I think you used the wrong biscuits.. It is the 7.5 oz can (10 small biscuits) they come in a 4 value pack and the whole can is 17 smart points 🙂
I believe that I did! I thought I had the right thing, lol. Was the only pb biscuits they sell here (in New Brunswick). We travel to the States, so I am going to check there to see if I can find them. I figured something was up, since it was off by so much!! I will be sure to weigh them out next time. Glad you enjoyed it Nadia, no the 7.5 oz package is not sold here in Canada, but you can weigh them out and use the same amount so you are keeping the points the same

Freestyle is still smart points, there was no changes to this recipe only those that had the new zero foods changed (chicken recipes etc)
