These nacho dip roll ups bring all your favorite nacho flavors into a perfectly portable, hand-held bite — seasoned beef, creamy cheese, jalapeños, and salsa all rolled up in a soft tortilla and sliced into pinwheels that disappear off the platter in minutes. They’re the ultimate game day appetizer and just as great for quick lunches or after-school snacks. Everything can be prepped ahead and sliced just before serving, making them one of the easiest crowd-pleasers in your back pocket. Serve with salsa or sour cream for dipping and watch the plate empty.
- • Swap: Use ground turkey or shredded rotisserie chicken instead of beef for a lighter filling with the same bold nacho seasoning.
- • Make-ahead: Assemble the rolls up to 24 hours ahead, wrap tightly in plastic wrap, and refrigerate; slice fresh before serving.
- • Storage: Sliced roll ups keep refrigerated for up to 2 days in an airtight container.
- • Variation: Swap the beef for refried beans and skip the meat entirely for a satisfying vegetarian nacho roll up.
- • Serving: Arrange cut-side up on a platter alongside small bowls of salsa, sour cream, and guacamole for a full nacho spread.
