·         1 medium-sized cauliflower head, chopped into florets, 500 g.

·         ½ cup (120 g) plain nonfat yogurt

·         ¼ cup (60 ml) skimmed milk

·         1 clove of garlic, minced

·         Salt and pepper to taste

Instructions:

1. Trim and cut the cauliflower into evenly sized florets. Rinse them thoroughly under cold water.

2. In a large pot, add enough water to cover the cauliflower florets. Bring the water to a boil, then reduce heat to low and simmer for 10-15 minutes, or until the florets are tender.

3. Drain the cauliflower florets in a colander and set aside to cool slightly.

4. In a food processor, combine the cooked cauliflower florets, plain yogurt, skimmed milk, minced garlic, salt, and pepper. Process until the mixture is smooth and creamy.
