I have a bit of an obsession with flatout breads.. I seriously couldn’t live without them..ok I could, but it would be a very boring life! 😉 Flatout bread makes weight watchers so much easier, they range from 2-4 points each and there are endless possibilities on what you can create with them. Here are some of my favorite creations and I am no where near done creating! 🙂

Strawberry cinnamon sugar mini pizza’s

1 flatout fold it (I use 5 grains and flax) 1 Tbsp sugar, 1tsp cinnamon, fresh strawberries and whipping cream.

Cut your fold it in 2, mix your sugar and cinnamon in a small bag, sprinkle most of it on your bread (leaving a little aside for topping) spray your bread with some cooking spray and pop in oven at 350F for 5-7 minutes checking that it does not burn. Sprinkle remaining sugar mix, top with strawberry slices and whip cream. 5sp/3pp for both pieces. 🙂

Taco pizza

1 flatout artisan pizza bread, 1/3 cup light grated cheese (I use a ww mexican blend) 5oz cooked extra lean ground beef seasoned with taco seasoning, diced peppers & onions.

Bake in oven at 325F for 10-15 minutes until bread is slightly crispy. Whole pizza is 12sp/10pp. 🙂

Banana s’mores quesadilla

1 flatout original light, banana slices, 1/4 cup mini marshmallows and 1 square of broken up lindt 70% dark chocolate.

Spread banana slices out on half of the bread, top with marshmallows and broken up chocolate, fold other half of bread on top. Bake in oven at 325F for approx 7-8 minutes. This one is messy to eat but so worth it! 6sp/4pp total 🙂

Chicken bacon ranch grilled cheese sandwich

1 flatout fold it (I use 5 grain and flax) 1/4 cup light grated cheese (I use ww Mexican blend) 1oz shredded cooked chicken, 1 slice of low point cooked bacon (I use oscar mayer center cut, 2 slices is 1pp) and just a tiny drizzle of light ranch dressing, about 1/2Tbsp.

Make up your sandwich and then spray your pan with cooking spray and cook as you would a grilled cheese sandwich. This is one of my favorite lunches for 6sp/6pp. 🙂

BBQ chicken & ranch pizza

1 flatout original light, 1/3 cup light grated cheese (I use ww Mexican blend) 2oz cooked shredded chicken, 1Tbsp barbecue sauce & 1 Tbsp light ranch dressing.

Top your bread with cheese, chicken and barbecue sauce, bake in oven at 325F for approx 10 minutes, drizzle with ranch when out of the oven. 9sp/8pp for the whole pizza. 🙂

Banana peanut butter & chocolate grilled sandwich

1 flatout fold it (I use 5 grain and flax) banana slices, 1/2Tbsp melted peanut butter and 1 square of broken up 70% lindt dark chocolate.

Layer banana slices on half of your bread, drizzle your melted peanut butter on top (I melt mine for about 40-45 seconds) top with broken chocolate pieces. Spray a pan with cooking spray and grill on stove over medium heat on both sides for a few minutes. A little messy and gooey but so delicious and only 5sp/4pp. 🙂

Cinnamon sugar fruit crisps

1 flatout fold it (I use 5 grains & flax) 1 Tbsp sugar, 1tsp cinnamon, fruit of choice.

Cut your fold it in 2, then each circle in 4, I used a pizza cutter, mix sugar and cinnamon in a bag and sprinkle over pieces (leave a little mix to sprinkle on tops) spray pieces with cooking spray and bake in oven at 325F for 5-7 minutes, checking they don’t burn. Top with cut up fruit and sprinkle with left over sugar mix.. 5sp/3pp for all 8 pieces, this makes a delicious afternoon snack. 🙂

Fruit pizza

1 flatout artisan pizza bread (I used reg white) 3 Tbsp light cool whip, banana & strawberry slices and 1 square of melted lindt 70% dark chocolate (I melt mine for 35 second intervals in microwave turning each time until melted)

Spread cool whip on bread, top with fruit slices and drizzle with chocolate. So delicious and refreshing.. whole pizza is 7sp/6pp. 🙂

Chicken sausage quesadilla

1 flatout original light, 1/3 cup light grated cheese (I use ww Mexican blend) 1 chicken sausage cooked and sliced (I use a spicy al fresco kind) sliced peppers and onions.

Fill half of your bread with everything and fold over, bake in oven at 350F for 10-15 minutes. whole quesadilla is 8sp/7pp. 🙂
