This chocolate oatmeal cookie peach crumble is the kind of dessert that makes people ask for the recipe before they’ve even finished the first bite. Sweet, juicy peaches baked under a chocolate-studded oatmeal crumble topping — it hits that magical spot between fruit dessert and cookie, and the combination works better than you’d expect. It’s homey, comforting, and comes together quickly with pantry staples and fresh or frozen peaches. Serve it warm and you’ve got a dessert that feels truly special with almost no effort.
- Swap: Use frozen peaches when fresh are out of season — thaw and drain them well before using to prevent a watery filling.
- Make-ahead: Assemble unbaked and refrigerate up to 8 hours; bake when ready and add a few extra minutes if going in cold.
- Storage: Cover and refrigerate for up to 4 days; reheat individual servings in the microwave for 60–90 seconds.
- Variation: Substitute peaches with nectarines, apricots, or a mix of stone fruits for a different version every time.
- Serving: Serve warm with a scoop of vanilla frozen yogurt or a drizzle of caramel sauce over the top.
