Mmmmm cookies.. 🙂 They have got to be one of my favorite things to bake, and there’s some great substitutions you can use to make them point friendly. These chocolate chip pecan cookies have greek yogurt in them and are super yummy.. Only 2 smart points each!
Chocolate chip pecan cookies

Ingredients
- 1 1/4 cup flour
- 1 t baking powder
- 1/4 cup white sugar
- 1 egg
- 1/3 cup non fat vanilla greek yogurt, 100g container
- 1 t vanilla
- 2 T mini chocolate chips
- 2 T pecan pieces, I used Trader Joe’s brand

Preheat oven to 350F

Whisk your egg and sugar together, add yogurt and vanilla and mix with a spoon. In separate bowl mix flour and baking powder.

Add your wet mix to your dry. Fold in chocolate chips and pecans. It will form a thick cookie dough.

Roll into 28 small balls and place on a cookie tray lined with parchment paper, push down cookies just a little with a fork. Bake in oven for approx. 10-12 minutes. 1 cookie is 2sp or 1pp. Enjoy 🙂

I have made these cookies several times and although they are delicious, each time I have had to add additional yogurt so that the dry ingredients can be incorporated and made into a workable dough. Is it possible that one of the wet ingredients has been omitted or that the quantity is incorrect? I thought I had made a mistake the first time but after making these on subsequent occasions the results are always the same.
