Prep: 15 minutes
Cook: 25 minutes
Total: 40 minutes
2 freestyle SP, 4SP/5PP per serving, 3 meatballs

Ingredients

  • 1 lb raw fat free ground chicken
  • 1/3 + 1/4 cup panko crumbs
  • 1 egg
  • Dash of salt & pepper
  • 1 garlic clove, diced
  • 1 tsp onion powder
  • 1.5 tsp italian seasoning
  • 4 Tbsp grated parmesan cheese
  • 2 light mozzarella cheese strings

Instructions

  • Preheat oven to 375F, line a large baking sheet with some parchment paper and lightly spray.
  • In a bowl mix together your chicken, 1/3 cup of panko, egg, salt & pepper, garlic, onion powder, italian seasoning and 2 Tbsp parmesan cheese.
  • Roll into 15 balls, about a heaping Tbsp of the mixture. Mix your 1/4 cup of panko crumbs and remaining 2 Tbsp of parmesan cheese together and sprinkle out onto a flat plate.
  • Cut your 2 cheese strings into 8 pieces each, best to cut in middle, then cut those 2 pieces in and repeat till you have 8 small pieces, yes you will have one piece leftover.
  • Remove some of your chicken mixture to allow you to place the small piece of cheese inside then roll back into a ball.
  • Roll your meatballs in the panko/parmesan mixture and place on baking sheet.
  • Bake for 25 minutes, turning over after 10 minutes.
  • Makes 15 meatballs, they can be frozen, cooked or uncooked.

  1. I made these subbing the ground chicken for ground turkey just because it was what I had on hand and they were a major hit! Everyone just loved them! Made any leftovers (there weren’t many) into open faced meatball subs for school lunches for the next day. I will definitely double the recipe and maybe do half chicken/half turkey next time so we have an extra meal to freeze… yum!!

  2. Hey there! I keep trying to enter this in the WW app, both using the recipe builder and your calculations at the bottom of the recipe, and I keep coming up with 3 and 4 points. What am I doing wrong? Thanks!

    1. The calculations will give you a wrong reading as it included the meat which is a zero food, are you entering it into the recipe builder and making sure the chicken comes up as zero?

  3. These were so amazing! Thank you for posting this recipe. There were sadly no leftovers. I’ll be doubling the recipe next time for sure.

  4. Another tasty fantastic recipe that has become a weekly dinner in our home. I double it and there is never any left.

  5. My family LOVES these meatballs! I have made this recipe a few times (using ground turkey), and thay are always a hit. We especially love to use them in meatballs subs. Thanks for a wonderful recipe.

  6. Hi…how are are these meatballs reheated ? Was just wondering with the panko crust and the cheese in the middle ?
    Thank you.
