All the flavors of classic chicken cordon bleu — tender chicken, smoky ham, and melted Swiss cheese — wrapped up in a crispy flatbread quesadilla that you can have on the table in under 20 minutes. It’s an ingenious weeknight shortcut that doesn’t cut corners on taste, and using a flatout wrap keeps the whole thing lighter and crispier than a traditional flour tortilla. Serve with a side of Dijon mustard or light honey mustard for dipping and you’ve got a meal that feels fancy enough for company but easy enough for any Tuesday night.

  • • Swap: Use deli turkey breast instead of ham for a slightly lighter take that works just as beautifully with the Swiss and chicken.
  • • Make-ahead: Shred cooked chicken ahead of time and refrigerate; assembly takes under 5 minutes when you’re ready to cook.
  • • Storage: Quesadillas are best fresh, but leftovers reheat well in a skillet over medium heat for 2 minutes per side.
  • • Variation: Add a light spread of Dijon mustard inside the quesadilla before assembly for a sharper cordon bleu flavor.
  • • Serving: Slice into triangles and serve with a simple green salad and a small bowl of honey mustard dipping sauce on the side.
