These chicken, bacon, and cheese mini bites are the definition of crowd-pleasing finger food. Tender seasoned chicken, crispy bacon, and melted cheese packed into bite-sized pieces that disappear off the platter almost faster than you can make them. They work for everything — game day, holiday parties, quick weeknight dinners, or meal-prepped lunches that are actually something to look forward to. The combination of flavors is classic for a reason, and the mini format makes them completely impossible to stop eating.

  • Swap: Use low-fat shredded cheese to keep things lighter without changing the gooey, melty result you’re going for.
  • Make-ahead: Cook the chicken and bacon filling ahead and refrigerate for up to 2 days; assemble and bake just before serving.
  • Storage: Refrigerate baked bites in an airtight container for up to 3 days; reheat in a 375°F oven for 8 minutes.
  • Variation: Add a small diced jalapeño to the filling for a spicy version that pairs beautifully with a cool ranch dipping sauce.
  • Serving: Serve on a board with dipping sauces like honey mustard, ranch, or BBQ sauce for a complete appetizer spread.

We all have parties to attend or host when the holidays arrive, and these little bites are a perfect addition to your appetizer table. Chicken, bacon & cheese mini bites

2 freestyle, 2sp/1pp each

Ingredients 

  • 1 package of pillsbury reduced fat crescent rolls
  • 4 oz cooked diced chicken
  • 3 T real bacon crumble
  • 1/4 cup light cream cheese
  • 1/3 cup light shredded mozzarella cheddar cheese blend

Instructions 

  • Preheat oven to 350F, spray a 24 mini muffin pan.
  • Use a rolling pin and roll out your crescent rolls. Cut the rolls into small squares big enough to fit into the muffin tin, I used a pizza cutter and made square shapes. You will have enough to fill 24 muffin cups with the pack of 8 crescent rolls.
  • Mix up the rest of your ingredients in a small bowl and divide between the 24 bites.
  • Bake in oven for approx. 8-10 minutes, keep an eye on them to prevent burning. Drizzle with ranch dressing, you don’t need much, 1-2 Tbsp in a little ziplock will cover them . 2 smart points each or 1 point plus each.
