This cheesy potato and bacon bake is pure comfort food — the kind of hearty, satisfying dish that warms you from the inside out. Tender potatoes layered with crispy bacon and melted cheese, baked until bubbling and golden — it’s everything you want in a side dish or a simple dinner on a cold night. It’s easy enough for a weeknight but rich enough to feel like a weekend treat. One pan, simple ingredients, and the kind of result that has everyone scraping the dish clean.
- Swap: Use turkey bacon or Canadian bacon to reduce the fat while keeping all the smoky, salty flavor.
- Make-ahead: Assemble the bake up to 24 hours ahead and refrigerate; bring to room temperature for 30 minutes before baking.
- Storage: Refrigerate covered leftovers for up to 4 days; reheat in the oven at 350°F for 15 minutes or microwave individual portions.
- Variation: Add thinly sliced onion layers and a sprinkle of smoked paprika for extra depth.
- Serving: Serve alongside a simple green salad with vinaigrette to balance the richness of the bake.

I really want to make this recipe, but I have tried four different large grocery stores and cannot find the soup it calls for! Where do you find this?
Hi Heather, I bought that in the U.S at Walmart, are you in Canada? Try looking at the campbells light creamy soups, maybe you can find a substitute? Or maybe the PC carry one?
I’m in Maryland. I found it on lunch break today in Target! ๐ Can’t wait to try this!
