Ingredients you need to make Weight Watchers Chicken Fritters:
- 16 oz boneless skinless chicken breast, weighed raw
- 1 egg
- 3 Tbsp flour
- 1 ½ Tbsp parmesan cheese
- 1/2 cup reduced-fat shredded mozzarella cheese
- 1 garlic clove, diced
- Few tbsp of fresh basil, chopped
- 1 Tbsp dried chives
- 1 Tbsp dried parsley
- Pinch of salt & pepper
- 1/4 tsp chili powder
- 2 tsp cooking oil or cooking spray
How to make this cheesy chicken fritters recipe:
- Cut the chicken into very small pieces (the smaller the better) and place chicken pieces in a bowl. Add in the egg, flour, parmesan, mozzarella, garlic, and seasonings. Using a spoon, mix well.
- Heat a large frying pan over medium to low heat, and add the oil. You may also need to spray the pan with non-stick spray since you are not using much oil.
- Once pan is hot add in about 1/4 cup of chicken mixture per fritter. Don’t overcrowd the pan too much. Cook about 3 at a time.
- Cook fritters about 10 minutes each, turning a few times. Don’t have the temp too hot or they will cook too much on the outside and not enough on the inside.

Chicken Fritter variations:
- Air Fryer Version: Pop these chicken fritters in an air fryer for 10 minutes at 350 degrees. You won’t need to use the cooking oil, which will save you some points! They’ll be 1 point per fritter instead of 2.
- Mexican Version: Instead of basil and mozzarella, add some chopped green onion and light Mexican cheese blend. You can even throw in some diced bell peppers for more volume without extra points.
- Buffalo Ranch: Use a ranch seasoning packet in place of all the herbs and spices. Don’t add buffalo sauce to the mixture though- it will make the fritters too soggy. Once cooked, dip the fritters in buffalo sauce for a classic buffalo ranch version.
- You can substitute almond flour for the flour if you need a gluten free version. It will change the points, so make sure to check your WW app recipe creator.
- This is a great recipe to hide some veggies in! Grate zucchini onto paper towels. Let sit for a few minutes so the paper towels soak up excess water from the zucchini. You will also have to squeeze out any remaining water. Add to the mixture before making into fritters. The addition of the veggies won’t change the flavor, but it will add more volume, so you can get 8-10 fritters out of the recipe instead of 6.
Tips and Tricks.
- Chop the chicken really small. If your chicken chunks are too big, the patties won’t stick together. They won’t cook evenly either. It’s very important to make sure the chicken pieces are dime size to pea size.
- Save time: use lean ground chicken instead of using chicken breast. The texture won’t be exactly the same, but the flavor will be just as good. And you’ll save plenty of time by not having to chop all of that chicken into small pieces.
- Save effort: Use a food processor to chop chicken if you have one. It will save you a good bit of time and effort doing it this way. And the clean up is way easier. Just make sure to stop the food processor before the chicken gets too fine. You don’t want a paste.

Cheesy chicken fritters

Ingredients

- 1 garlic clove, diced
- Fresh basil, chopped (I used a few Tbsp)

- Pinch of salt & pepper
- 1/4 tsp chili powder
- 2 tsp cooking oil, I also used some cooking spray

Boy – either I’m off or you’re off or the WW recipe builder in the app (late Jun , 2019) is off. I ran it through the recipe builder on the app, so it would be easier to track, and made only 1 change: I subbed Kraft fat free mozzarella (½ cup/1 FSP), for the TJ’s reduced fat mozzarella (½ cup/4 FSP), and it came out to 2 Freestyle Smart Points per fritter. With reduced fat cheese instead of fat free, it came out to 3 FSP per fritter! I will probably make them, but 6 points for two is a big difference from 2 points for two!
HI Laura, I always use my WW recipe builder.. here is my breakdown on my App.. Flour 2SP, Parm 1SP, oil 3SP cheese 2SP (the TJ mozza is 2SP for 2oz)
This recipe looks fantastic! I am going to make them today. I think the point discrepancy the reader mentioned above may come from the shredded cheese which you say is 2SP for 2 oz, but the recipe calls for 1/2 cup or 4 oz. Do you use 2oz or 4oz of cheese in the recipe?
Hi Lisa, actually 2oz of shredded cheese is 1/2 cup, 1oz is 1/4 cup.. Google it or weigh it out.. I always remember buying the Trader Joes light shredded mozzarella and they had nutritional info on the package per 1oz which weighed out to 1/4 cup 🙂 I hope you enjoy the fritters
Also it all depends on what brands you used opposed to the brands that she used, I always redo a recipe in the recipe builder with my products because sometimes they could be more points with brands than someone else uses at times it was less points, more work but I’d rather be accurate for myself.

Update….i just made them and added the ranch seasoning packet and they are superb!!! I doubled your recipe so I would have some for lunch this week except I only did 5 Tbsp of flour and then added 1 packet of ranch seasoning. They come out to 2 points each (freestyle) but you can have 3 for 5 points.

Probably since you don’t use much, I know baking with almond flour is a lot different but it should be ok in these
How would you reheat from frozen? As a single person the recipes for 4 can be a lot but are often tough to half or quarter small amounts. This looks amazing.
Hi Missi, you could probably freeze this before cooking as well. then dethaw and cook as normal, or to reheat I’d use oven or even air fryer
I made these cheesy chicken fritters last night for dinner with a steamed vegetable medley on the side and 1/4 cup instant mashed potatoes and they were delicious! I am eating leftovers for lunch and I’m enjoying the chicken fritter all over again. I will for sure be making these again!
