If you know me from my Instagram account that I have had for 2.5 years then you know about my non existing relationship with veggies and salads! 😉 My whole 43 years I have been breathing I have never liked veggies, yes of coarse I know there good for you but I just simply don’t care for them.. I am all about challenging myself these days, so I decided for the month of June I would try and eat a salad every other day.. This is BIG for me, and while a lot of these salads are similar, it got me eating a meal I normally never would of, and I actually enjoyed everyone of them.. You will notice for most of my salads I do not include dressing, for a few reasons, I am not a big fan of dressings and I find with adding the berries and fruit there really is no need for it..  Now you won’t see too much outside my comfort zone, I can’t do tomatoes and mushrooms YUK! and don’t even get me started on Avocado 😉 but I think I can claim that yes indeed I did eat a salad every other day in June, and I did’nt despise it lol… I know I have had many tell me on Instagram that they too struggle with veggies and don’t eat salads, so maybe these simple combos will get you trying something new just like I did 🙂 And on a positive note I now make sure I have a salad at least a few times a week… and that’s a few times more than I did before I started this challenge!!

Day 1

#1  Sweet baby lettuce, 4oz grilled chicken (seasoned with a little Simple girl Carolina sauce and cajun) fresh cilantro, fresh pineapple, strawberries, blueberries..20g Havarti cheese, 1Tbsp almond slices, 1Tbsp raw coconut chips..  8 points plus, 7 smart points..

Day 14

#2 Pizza inspired salad.. Lettuce, red onion, green pepper, 1 cheese string, 8 slices pepperoni, italian seasoning, 1Tbsp light ranch dressing.. 5 points plus, 6 smart points..

Day 7

#3 Spinach, fresh pineapple, cherries, blackberries, few banana chips, 28g yogurt covered raisins, 50g greek vanilla yogurt.. 6 points plus, 9 smart points..

Day 6

#4 Spinach, Raspberries, pineapple, cherries, strawberries, blackberries, blueberries and a blueberry lara bar.. 5 points plus, 7 smart points..

Day 12B

#5 Chicken caesar salad, romaine lettuce, 3oz seasoned grilled chicken, 1 slice cooked and crumbled oscar mayer center cut bacon, 10g croutons and 1tsp parmesan cheese.. 6 points plus, 5 smart points

Day 4

#6 Spinach, raspberries, red onion, mini baby bell cheese, 2Tbsp raw almonds, apple chips, banana chips, pineapple and red onion. 6 points plus, 7 smart points..

Day 2

#7 Sweet baby lettuce, 4oz seasoned grilled chicken, strawberries, blueberries, blackberries, 1Tbsp shredded asiago cheese, 28g greek yogurt covered raisins, 2Tbsp hickory sticks, 1/2Tbsp sliced almonds..11 points plus, 12 smart points..

Day 5

#8 Spinach, small pork sausage (3sp/pp ..cooked on grill) peppers, pineapple, 2Tbsp craisins, blackberries, 20g Havarti cheese, raspberries.. 7 points plus, 9 smart points..

Day 15

#9 Bacon cheeseburger salad.. Lettuce, 3oz homemade burger (cut up) 1Tbsp shredded light cheese, red onion, 1 slice cooked oscar mayer center cut bacon, 1T chipotle sauce .. 6 points plus, 6 smart points..

Day 13

#10 Spinach, lemon & lime, grapefruit, clementine, apple chips, 2Tbsp granola… 3 points plus, 4 smart points..

Day 9

#11 Mixed green, cucumber, peppers, blackberries, strawberries, baby bell cheese, 1Tbsp each of raw almonds, raisins, coconut chips.. 5 points plus, 5 smart points..

Day 8B

#12 Sweet baby lettuce, 1oz steak, cucumber, red onion, 2Tbsp feta cheese, few cashews, 1Tbsp raisins, 1Tbsp almond slices, 1tsp drizzled ranch dressing.. 7 points plus, 7 smart points..

Day 11

#13 BBQ chicken ranch.. lettuce, 3oz grilled seasoned chicken with BBQ sauce, 2 slices oscar mayer center cut bacon, 2Tbsp shredded asiago cheese, 1/2T light ranch dressing.. 6 points plus, 6 smart points..

Day 10

#14 Buffalo chicken salad, lettuce, buffalo chicken mixture (1Tbsp soft light cream cheese, 1 oz shredded chicken, 1Tbsp light ranch dressing, 1Tbsp franks hot sauce) 2Tbsp shredded light cheese and 1 slice oscar mayer center cut bacon.. 5 points plus, 5 smart points..

Day 3

#15 Sweet baby lettuce, 4oz grilled seasoned chicken, 1Tbsp shredded asiago cheese, blueberries, 1Tbsp raisins, 1Tbsp raw pumpkin seeds, red onion, peppers, cherries.. 7 points plus, 5 smart points..

    1. Thanks.. Yes many don’t, in the post I state that when using berries I find it does not need dressing plus I am not really a fan of dressing to begin with..

  3. These look amazing! I, too, despise salads but have decided to make myself eat them. I love tomatoes, which is my only saving grace. These are great ideas to help me mix it up!
