Weight Watchers Brownie Mug Cake

A quick and easy chocolatey brownie that you can make in a mug.

Ingredients

  • 2 ½ tbsp Granulated sugar replacement use a 1:1 replacement
  • 3 tbsp All-purpose flour
  • 4 ¼ tsp Unsweetened cocoa powder
  • 4 ¼ tsp Light butter substitute melted
  • 3 tbsp Unsweetened plain almond milk or milk of choice
  • ¼ tsp Vanilla extract
  • Optional: mini chocolate chips to taste

Instructions

  • In a large microwave-safe mug, mix all of the dry ingredients with a fork and break any lumps.
  • Fold in the liquid ingredients, ensuring there aren’t any missed pockets of flour. Be careful not to overmix. Add optional chocolate chips to the batter or sprinkle them on top (you will need to adjust WW points in the recipe builder if using).
  • Microwave the brownie mug cake for 60 seconds to start, and then check on it. It should not be liquidy or wet. If it isn’t cooked through yet, keep cooking it longer in 8-10 second increments until the center is done and the top looks baked. Serve immediately.
