Scotch eggs

Beyond their visual appeal, Scotch eggs boast several practical advantages. They're surprisingly simple to make, making them a great option for a quick and satisfying meal.

Ingredients

  • 6 eggs + 1 egg (beaten)
  • 200 g of smoked turkey sausage, low fat
  • 400 g of ground pork (ground twice for better shaping)
  • Salt to taste
  • Pepper to taste
  • 1 teaspoon of dried oregano
  • 1 teaspoon of garlic powder
  • ¼ cup of all-purpose flour (30 g)
  • 1 cup of breadcrumbs (80 g)
  • Chopped scallions for the pork mixture

Instructions

  • Cook the eggs: Bring a large pot of water to a boil. Carefully place the eggs in the boiling water and cook for 6 minutes for hard-boiled eggs with a slightly creamy yolk. Then, remove the eggs from the water and immediately immerse them in a bowl of ice water to stop the cooking process. Peel the eggs carefully and pat them dry with paper towels.
  • Prepare the pork mixture: In a large bowl, mix together the ground pork, smoked turkey sausage ground, chopped scallions, dried oregano, garlic powder, salt, and pepper. Ensure all ingredients are well combined.
  • Wrap the eggs: Divide the pork mixture into six equal parts. Take each hard-boiled egg and wrap it completely with a portion of the pork mixture, ensuring it is evenly coated.
  • Prepare the coating: In two separate plates, place the all-purpose flour and breadcrumbs. In a small bowl, lightly beat one egg.
  • Coat the eggs: Roll each pork-wrapped egg first in the all-purpose flour, then in the beaten egg, and finally in the breadcrumbs, ensuring they are fully coated.
  • Cook in the Air Fryer: Preheat your Air Fryer to 180°C (350°F). Place the Scotch eggs in the Air Fryer basket, making sure not to overcrowd them. Cook for 15-20 minutes, flipping them halfway through, until golden brown and crispy on the outside.
  • Serve and enjoy: Remove the Scotch eggs from the Air Fryer and let them rest for a few minutes before serving. You can accompany them with a sauce of your choice or enjoy them on their own. Bon appétit!
