Servings: 4 servings
- 500 g. salmon, cut into cubes
- 1 red bell pepper, cut into chunks, 110 g.
- 1 zucchini, sliced, 320 g.
- Slices of lime (1 slice per skewer)
- 1 red onion, cut into chunks, 100 g.
- Juice of 1 lime
- Olive oil for drizzling
- 1 teaspoon taco seasoning
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Yogurt Tartar Sauce Ingredients:
- ½ cup plain Greek yogurt, 120 ml
- 2 tablespoons chopped pickles
- 1 tablespoon chopped fresh dill
- 1 tablespoon lemon juice
- Salt and pepper to taste
Marinate the Salmon: In a bowl, combine the salmon cubes with taco seasoning, dried oregano, salt, pepper, and lime juice. Let it marinate for at least 15 minutes.
Prepare the Vegetables: Thread the marinated salmon, red bell pepper chunks, zucchini slices, lime slices, and red onion onto skewers, alternating the ingredients.
Preheat the Grill: Preheat your grill to medium-high heat.
Grill the Skewers: Drizzle the skewers with olive oil and place them on the preheated grill. Cook for about 4-5 minutes on each side, or until the salmon is cooked through and the vegetables are tender.

In a small bowl, combine the Greek yogurt, chopped pickles, fresh dill, and lemon juice. Season with salt and pepper to taste, and mix until well combined.
