Apple cranberry crisp recipe

Ingredients

  • 6 large apples peeled and sliced
  • 2 cups fresh cranberries
  • 1 Tbsp fresh lemon juice
  • 1 tsp vanilla
  • 2 Tbsp flour
  • 2 Tbsp brown sugar
  • FOR THE CRUMBLE
  • 1/2 cup flour
  • 1/2 cup + 2Tbsp oats *quick oats work fine
  • 2 Tbsp brown sugar
  • 1/4 cup chopped walnuts
  • 1/2 tsp nutmeg
  • 3 Tbsp light butter melted

Instructions

  • Preheat the oven to 350F and spray a 9 inch baking dish with some nonstick cooking spray.
  • Peel and slice the apples. Any apples will work- choose your favorite.
  • Add the sliced apples and cranberries to a bowl. Add in the 2 tablespoons of flour, brown sugar, lemon juice, and vanilla and stir well so that the apples are completely coated.
  • Place the fruit mixture into the baking dish.
  • In a small bowl mix together the crumble topping - flour, oats, brown sugar, walnuts, nutmeg, and melted butter. Mix until it’s crumbly, and then sprinkle on top of the fruit mixture.
  • Bake the crisp in the oven for approximately 45 minutes. You want the fruit tender and the crumble golden.
  • Let it cool for 5 minutes then serve.
