- Sautee the diced peppers and onions in a frying pan with a little cooking spray for 5 minutes.  
- Preheat the oven to 400F, and spray a baking dish with some non-stick cooking spray. 
- Mix the egg and lemon into a small dish. Spread the breadcrumbs out onto a flat plate. 
- Cut the 3 chicken breasts open so you have 2 (3 oz pieces).  
- Divide the 2 oz of prosciutto into 6 portions, approx 0.3oz in each roll. 
- Place the prosciutto on top of the chicken, then top with 0.5 oz of mozzarella, and add a spoonful of the pepper and onion mix. I also added a dash of pepper. Roll the chicken up, and use toothpicks to hold it in place if you need to. 
- Dip the rolled chicken into the egg mix and then roll it in the breadcrumbs. Place it on the baking dish, and repeat with the remaining chicken. 
- Once all of the chicken is rolled and in the dish, spray the tops with a little cooking spray, and bake in the oven for 25 minutes. 
- Serve warm, and enjoy!
