Servings: 1
- 1 tbsp (1/4 oz) Hot cocoa mix (I used Swiss Miss no sugar added)
- 3 tbsp All purpose flour
- 2 1/4 tsp Zero-calorie granulated sugar replacement use a 1:1 replacement
- 1/8 tsp Baking powder
- 3 tbsp Unsweetened almond milk
- 1 1/2 tsp Light butter substitute melted
- Optional: no-sugar-added or regular marshmallows
In a bowl, mix the dry ingredients until there are no lumps, and then fold in the wet ingredients. Add optional marshmallow pieces. Mix until smooth, but be careful not to overmix. Transfer the mixture to a microwave-safe mug (you can also mix the batter in the mug itself if that is easier for you).
Microwave for 45-75 seconds or until fully cooked. If you check on it at the 45-second mark and it needs more time, continue to cook it in 8-10-second intervals until it is done.
Optionally, add marshmallow pieces on top and serve immediately with desired toppings.
