Preheat your grill or grill pan to medium-high heat. Season the chicken cutlets with salt and taco seasoning.
Grill them until they are cooked through and have grill marks on both sides. Remove from the grill and let them rest for a few minutes. Then, slice the chicken into strips.
Prepare the other ingredients by washing and slicing the lettuce, tomato, red cabbage, and avocado.
Warm the flour tortillas on the grill or in a dry skillet until they are pliable.
Assemble the burritos by spreading a generous amount (about 12.5g) of chipotle sauce onto each tortilla.
Place a few slices of grilled chicken onto the tortilla, followed by the lettuce, tomato, red cabbage, red bell pepper, avocado slices, and crumbled mozzarella cheese.
Fold the sides of the tortilla inwards and roll it tightly to create a burrito shape.
Optional: Grill the assembled burritos for a few minutes on each side to toast them slightly and melt the cheese.
Serve the Chipotle Ranch Grilled Chicken Burritos warm, and if desired, you can serve them with additional chipotle sauce on top.
