Chipotle Ranch Grilled Chicken Burrito

A healthy, homemade version of this indulgent Taco Bell favorite.

Ingredients

  • 250 g Chicken breast (or boneless, skinless chicken breasts pounded thin)
  • 100 g Lettuce
  • 150 g Tomato
  • 100 g Red cabbage
  • 1/2 Small avocado
  • 4 tbsp Chipotle sauce
  • 4 Flour tortillas Low carb
  • 50 g Mozzerela cheese Shredded
  • 1 tsp Taco seasoning
  • Salt To taste

Instructions

  • Preheat your grill or grill pan to medium-high heat. Season the chicken cutlets with salt and taco seasoning.
  • Grill them until they are cooked through and have grill marks on both sides. Remove from the grill and let them rest for a few minutes. Then, slice the chicken into strips.
  • Prepare the other ingredients by washing and slicing the lettuce, tomato, red cabbage, and avocado.
  • Warm the flour tortillas on the grill or in a dry skillet until they are pliable.
  • Assemble the burritos by spreading a generous amount (about 12.5g) of chipotle sauce onto each tortilla.
  • Place a few slices of grilled chicken onto the tortilla, followed by the lettuce, tomato, red cabbage, red bell pepper, avocado slices, and crumbled mozzarella cheese.
  • Fold the sides of the tortilla inwards and roll it tightly to create a burrito shape.
  • Optional: Grill the assembled burritos for a few minutes on each side to toast them slightly and melt the cheese.
  • Serve the Chipotle Ranch Grilled Chicken Burritos warm, and if desired, you can serve them with additional chipotle sauce on top.
