Preheat the oven to 350F, and spray a regular size muffin tin with some non stick cooking spray. Do not use liners, the muffins will probably stick to them.
In a large bowl whisk the egg, egg whites, and brown sugar together. Add in the apple sauce, milk, 2 Tbsp caramel sauce, vanilla extract, and shredded apple, and mix well.
Stir in the dry ingredients - all purpose flour, baking powder, baking soda, and cinnamon.
Divide the batter over the 12 muffin cups.
Place the 2 tablespoons of caramel sauce in a small zip lock bag, cut off the tip, and drizzle it over the muffin batter. Sprinkle on the mini chocolate chips.
Bake them in the oven for approx 22-25 minutes. Enjoy!
