Air Fryer Quesadillas

Servings: 2 quesadillas
- 1 cup shredded chicken, 200 g.
- Salt to taste (If you consider it necessary)
- ½ cup sugar-free, light marinara sauce, 120 g.
- ¾ cups shredded Mozzarella cheese, nonfat, 75 g.
- ½ cup diced tomatoes, 100 g.
- ¼ cup red onion, thinly sliced, 50 g.
- 2 medium-sized tortillas, whole wheat tortillas
In a bowl, mix the shredded chicken and mozzarella cheese with the marinara sauce until well combined.
Place a tortilla on a clean surface and spread a layer of the chicken mixture onto half of the tortilla.
Sprinkle some diced tomatoes, and red onion over the chicken mixture.
Fold the other half of the tortilla over the filling, creating a half-moon shape.
Repeat the process for the remaining tortillas and filling.
Preheat a non-stick skillet over medium heat.
Cook each quesadilla in the air fryer at 180°C (350°F) for about 2-3 minutes on each side or until the cheese is melted and the tortillas are crispy.
Remove the quesadillas from the skillet and let them cool slightly. Cut the quesadillas into wedges and serve them hot.
