Air Fryer Quesadillas

Ingredients

  • 1 cup shredded chicken, 200 g.
  • Salt to taste (If you consider it necessary)
  • ½ cup sugar-free, light marinara sauce, 120 g.
  • ¾ cups shredded Mozzarella cheese, nonfat, 75 g.
  • ½ cup diced tomatoes, 100 g.
  • ¼ cup red onion, thinly sliced, 50 g.
  • 2 medium-sized tortillas, whole wheat tortillas

Instructions

  • In a bowl, mix the shredded chicken and mozzarella cheese with the marinara sauce until well combined.
  • Place a tortilla on a clean surface and spread a layer of the chicken mixture onto half of the tortilla.
  • Sprinkle some diced tomatoes, and red onion over the chicken mixture.
  • Fold the other half of the tortilla over the filling, creating a half-moon shape.
  • Repeat the process for the remaining tortillas and filling.
  • Preheat a non-stick skillet over medium heat.
  • Cook each quesadilla in the air fryer at 180°C (350°F) for about 2-3 minutes on each side or until the cheese is melted and the tortillas are crispy.
  • Remove the quesadillas from the skillet and let them cool slightly. Cut the quesadillas into wedges and serve them hot.
