Ingredients

  • 1 pork tenderloin about 1 lb or 454 g
  • 2 tablespoons vinegar 30 ml
  • 1 teaspoon olive oil 5 ml
  • 1 teaspoon garlic powder 3 g
  • 1 teaspoon salt 6 g
  • ½ teaspoon black pepper 1 g
  • 1 teaspoon dried oregano 1 g
  • 1 teaspoon paprika 2 g
  • 1 teaspoon dried parsley 1 g

Instructions

  • Prep the pork: Begin by patting the pork tenderloin dry with paper towels. This step is crucial as it helps the seasoning adhere better to the meat and promotes better browning during cooking.
  • Make a spice blend: In a small bowl, mix together the garlic powder, salt, black pepper, dried oregano, paprika, and dried parsley. This spice blend will create a flavorful crust on the pork.
  • Mix the marinade: In another bowl, combine the vinegar and olive oil. This mixture will help the spices stick to the meat and add a subtle tanginess to the dish.
  • Coat the meat: Brush the vinegar and oil mixture evenly over the entire surface of the pork tenderloin. Make sure to coat it thoroughly but not excessively.
  • Add spice mixture: Sprinkle the spice mixture over the pork, using your hands to pat it gently onto the meat, ensuring an even coating on all sides. The moisture from the oil and vinegar will help the spices adhere.
  • Preheat your air fryer to 400°F (200°C) for about 3-5 minutes. Once preheated, carefully place the seasoned pork tenderloin in the air fryer basket. Try to position it so that there's space around the meat for air to circulate.
  • Cook the pork for 20-25 minutes, turning it over halfway through the cooking time. The exact cooking time may vary depending on the thickness of your tenderloin and the specific model of your air fryer.
  • Check for doneness using a meat thermometer to check that the internal temperature of the thickest part of the pork has reached 145°F (63°C). This is the safe temperature for pork, ensuring it's cooked through while remaining juicy.
  • Rest and slice: Once cooked, carefully remove the pork tenderloin from the air fryer and place it on a cutting board. Let it rest for 3-5 minutes before slicing. This resting period allows the juices to redistribute throughout the meat, ensuring each slice is moist and flavorful.
  • Serve: After resting, slice the pork tenderloin into medallions about 1/2 inch (1.3 cm) thick. Arrange on a serving platter and garnish with fresh herbs if desired.
