Servings: 14 people
- 1 cup Yellow cornmeal
- 1 cup All-purpose flour
- 1 ½ tsp Baking powder
- ¾ tsp Salt
- 1 ½ tbsp Zero-calorie sweetener or sugar
- 3 tbsp Green onions chopped
- 1 ½ tsp Garlic powder
- 3 ½ tbsp Light butter substitute melted
- 5 tbsp Fat-free milk
- 1 Egg
In one bowl, mix all of the dry ingredients until there are no lumps. Add the green onions and mix to combine. In a separate bowl, whisk the eggs with the other wet ingredients.
Add the wet mixture to the dry and gently fold to form a batter. Be careful not to overmix. If the mixture seems dry, you can add a splash or two of milk/water to help moisten the batter.
Scoop the batter into balls that are about 2 tablespoons each and roll them with your hands so they're smooth.
Working in batches if needed, air-fry the hush puppies for 8-10 minutes at 385F, flipping halfway through cooking. You’ll know they are done when you tap on them, and they feel hollow. They will also be golden brown on the outside.
