- 2 cups frozen strawberries
- 2 large bananas
- 1/2 cup coconut milk unsweetened
- 4 fresh dates pitted and soaked in water for 15 minutes
- 1 vanilla bean pod
Split vanilla bean pod lengthwise and then, scrape seeds. Add scraped seeds to a bowl of a high-speed blender or food processor.
Add the remaining ingredients and simply blend until completely smooth.
Pour the mixture into a freezer-safe container; freeze your ice cream for at least 3 hours or overnight.
Let your ice cream thaw at room temperature for 10 to 20 minutes before serving. Enjoy!
