Candy cane mini cupcakes

Ingredients

  • 1 cup white cake mix I use Betty Crocker
  • 1.5 T unsweetened applesauce
  • 3 T egg whites
  • 1/4 cup water
  • 1/2 t peppermint extract
  • 1.5 T crushed candy cane bits

Instructions

  • Preheat oven to 350F
  • Mix up all of your ingredients and divide into a sprayed 24 mini muffin pan.
  • Bake in oven for approx. 10 minutes.
  • Let cool and then top with a little vanilla icing (I used 2T Betty Crocker) then sprinkle with candy cane bits.
