- 1.5 cup oats I use Quaker quick oats
- 1 cup flour
- 1/4 cup ground flax seed
- 1 Tbsp brown sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1 mashed banana
- 1 egg
- 1/3 cup unsweetened apple sauce
- 2 Tbsp milk I used 1%
- 1 tsp vanilla
- 1 cup blueberries I used frozen but fresh would work too
Preheat the oven to 350F, and spray a large cookie sheet with nonstick cooking spray.
In a bowl, mix all of the dry ingredients together.
In a separate bowl, whisk the egg, milk, vanilla extract, unsweetened apple sauce, and mashed banana.
Add the wet ingredients to the dry and mix well. Slowly fold in the blueberries. Bake in the oven for approx 14 minutes. Let them cool and enjoy!
