Pumpkin spice donuts with brown sugar buttercream icing

- 2 Tbsp egg whites I use from the carton
- 1/4 cup pumpkin pure canned pumpkin
- 1/3 cup milk I used skim
- 1 tsp vanilla
- 1/2 cup + 2 Tbsp flour
- 1 tsp baking powder
- 1 Tbsp brown sugar
- 1.5 tsp pumpkin spice or 1/2 tsp each of cinnamon, all spice and nutmeg
- FOR THE BUTTERCREAM ICING
- 1/2 Tbsp butter melted
- 1 Tbsp brown sugar
- 1/2 Tbsp milk
- 2 Tbsp icing sugar confectionery sugar
Preheat the oven to 350F, and spray a 6 hole donut pan with some cooking spray.
In a bowl, whisk together the egg whites and 1 tablespoon of brown sugar. Add in the pumpkin puree, ⅓ cup milk, and vanilla and mix well.
Stir in the all purpose flour, baking powder, and pumpkin spice.
Divide batter into the 6 donut hole pan.
Bake in the oven for 14-16 min.
Meanwhile, you can make the frosting! Stir melted butter, and 1 tablespoon brown sugar together in a small bowl. Add ½ tablespoon milk and the icing sugar and stir it well. Store it in the fridge until the donuts are baked. Top donuts with the icing. Enjoy!
