Sautee the diced peppers and onions in a frying pan with a little cooking spray for 5 minutes.
Preheat the oven to 400F, and spray a baking dish with some non-stick cooking spray.
Mix the egg and lemon into a small dish. Spread the breadcrumbs out onto a flat plate.
Cut the 3 chicken breasts open so you have 2 (3 oz pieces).
Divide the 2 oz of prosciutto into 6 portions, approx 0.3oz in each roll.
Place the prosciutto on top of the chicken, then top with 0.5 oz of mozzarella, and add a spoonful of the pepper and onion mix. I also added a dash of pepper. Roll the chicken up, and use toothpicks to hold it in place if you need to.
Dip the rolled chicken into the egg mix and then roll it in the breadcrumbs. Place it on the baking dish, and repeat with the remaining chicken.
Once all of the chicken is rolled and in the dish, spray the tops with a little cooking spray, and bake in the oven for 25 minutes.
Serve warm, and enjoy!
