1.5lbsbeef *I used stewing beef, sirloin or similar will work fine
1cupcarrots, peeled and diced
1cupcelery, diced
1cuponion, diced
4small-mediumwhite potatoes, peeled and cut into 1-2 inch pieces
7cupsbeef broth
3garlic cloves, minced
2tbsptomato paste
3bay leaves
1tspitalian seasoning
1tspsalt
1tsppepper
3/4 cuppearl barley
Instructions
Brown the beef in a frying pan over medium heat, until it’s almost fully cooked through (it will finish cooking in the slow cooker).
Add the beef and all of the ingredients to a slow cooker and cook on high for 4 hours or low for 7-8 hours.
Serve when you’re ready to eat. Enjoy!
